Ingredients
- 1 Large Potato
- 1/2 cup low fat plain yogurt
- 1 cup steamed vegetables….try broccoli and red pepper, coarsely chopped
- 1/4 cup cheddar cheese, grated
- Salt and Pepper to taste
Directions

- Now preheat your oven to 425 degrees. Use the oven after you microwave the potato
- Slice the microwaved potato lengthwise. Scoop out the potato pulp..leaving about 1/4 inch left in the shell.
- Mash the scooped out potato in a mixing bowl

- Spoon the mixture back into the potato shells
- Place the potato shells on a baking sheet
