I know it is hard to believe, but it certainly is true.  This baked cheese potato recipe is stuffed with all types of good things.  Let’s see…..low fat yogurt and steamed vegetables.  How does that sound for a Baked Cheese Potato Recipe???

How To Make The Baked Cheese Potato Recipe

Ingredients

  • 1 Large Potato
  • 1/2 cup low fat plain yogurt
  • 1 cup steamed vegetables….try broccoli and red pepper, coarsely chopped
  • 1/4 cup cheddar cheese, grated
  • Salt and Pepper to taste

Directions

  1. Microwave the potato. This how to microwave a baked potato
  2. Now preheat your oven to 425 degrees. Use the oven after you microwave the potato
  3. Slice the microwaved potato lengthwise. Scoop out the potato pulp..leaving about 1/4 inch left in the shell.
  4. Mash the scooped out potato in a mixing bowl
  5. Mix into the mashed potatoes: yogurt, salt and pepper, steamed vegetables
  6. Spoon the mixture back into the potato shells
  7. Place the potato shells on a baking sheet
  8. Top with cheddar cheese
  9. Bake for 10-15 minutes
