Let me give you my spiel about a potato slicer.  You know the infomercial slicers you see on TV?  The ones that can slice a tomato, onion, potato, or anything else as thin as a strand of hair?  Well you know what?  They actually do work.  The beauty of the slicer, besides the fact that they make life easier, is that they slice each slice of the potato at the exact same thickness, which makes for a much better sweet potato chip recipe.  This is important when you cook the potato slices.  If they are all the same thickness they will all cook evenly.  You can pick a slicer up at Wal-Mart or a dollar store.  The most you should pay is $15.  Believe me it is well worth it.

How To Make Sweet Potato Chips

Ingredients

  • 3 sweet potatoes, washed, peeled and sliced (about 1/8 inch thick–get the slicer)
  • 2 tablespoons of vegetable oil
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 375F
  2. Try and pat all of the moisture off of the sweet potato slices (use a paper towel)
  3. Lay out the slices on a couple sheets of paper towels
  4. Heat the oil in a skillet
  5. Add the curry powder. Cook until the mixture become fragrant. Probably no more than 30 seconds. Don’t over do it.
  6. Remove from the heat, stir in the paprika and then drizzle over the potatoes.
  7. Sprinkle the slices with salt
  8. Lay the slices out on a non-stick baking sheet.
  9. Put in oven for 10-15 minutes (until slightly brown)
  10. Turn the slices over and bake for an additional 5 minutes or so (don’t let them burn)
  11. Let cool. The chips will lose their soggy factor as they cool
