Ingredients
- 4 medium size yams
- 1/4 cup shortening
- 1 tablespoon butter
- 2 tablespoons sugar
Directions
- Parboil yams in their skins
- Peel, slice the yams in rounds about 1/8 inch thick
- Melt the shortening in a large skillet
- Brown the slices of yams quickly on both sides
- Turn off the heat, add butter, and sprinkle with sugar
- Can be served with bacon curls and/or spiced crab apples
