Ingredients:
- 9 medium size potatoes
- 6 slices of bacon
- 3/4 cup chopped onions
- 2 tablespoons all purpose flour
- 2 tablespoons white sugar
- 2 teaspoons salt
- 1/2 teaspoon celary seed
- 1/8 teaspoon ground black pepper
- 3/4 cup water
- 1/3 cup distilled white vinegar
Directions:
- Scrub and clean 9 medium size potatoes
- Boil a large pot of water. Make sure to salt the water before boiling.
- Place the potatoes in the boiling water. You will need to cook the potatoes for 25-30 minutes. You want them to be tender but still have firmness. Check to see if they are ready by poking a fork into them.
- When the potatoes have finished cooking: Drain the water, let the potatoes cool for about 5 minutes, then slice them thin.
- Place the 6 strips of bacon in a skillet. You will cook the bacon over a medium heat with a cover on the skillet. When finished cooking you will drain the drippings and place them off to the side. Crumble the cooked bacon.
- Now you are going to saute the onions in the bacon drippings until they are golden brown. (food that is sauteed is usually cooked for a relatively short period of time over high heat, with the goal of browning the food while preserving its color, moisture and flavor)
- In a bowl you are now going to whisk the flour, sugar, salt, celery seed, and pepper. Add this mixture to the sauteed onions and cook and stir until bubbly. Once it is all bubbly remove from heat. Now you need to stir in the water and vinegar, then heat back up and bring to a boil. Make darn sure you are stirring constantly when you bring it back up to a boil. You are going to boil and stir for one minute.
- Now gently stir in the bacon and sliced potatoes into the vinegar/water mixture, stirring gently until the potatoes are heated through.
