The name of this dish is really a mouth full:  Baked Stuffed Potatoes With Cheese and Salsa Verde

It might take a little bit of practice to say it three times fast, but once you eat this Stuffed Baked Potato you will be coming back for seconds.  It is so good.  If you have never had food with a Mexican flair, then you are in for quite a treat.

How To Make Baked Stuffed Potatoes

Ingredients

  • 4 large white skin potatoes
  • 1/2 cup Tejano salsa verde (or substitute)
  • 1 tablespoon, minced green chilies
  • 2-3 tablespoons butter
  • 1/2 cup sour cream
  • 3/4 cup grated sharp Cheddar cheese
  • salt and pepper to taste

Directions

  1. Preheat oven to 375F
  2. Scrub and pat dry the potatoes (Do Not Peel)
  3. Using a paring knife, pierce deeply into each potato before baking
  4. Set potatoes directly on oven rack and bake for 1 hour or until tender
  5. Remove from oven and let set for 10 minutes
  6. Cut about 1/3 off the tops of the potatoes
  7. Use a spoon to scoop out the pulp
  8. Reserve the shells
  9. Mash the pulp and stir in the chilies, salsa, butter, sour cream, and cheese
  10. Add salt and pepper for taste
  11. Increase oven temp to 400F
  12. Fill the shells generously with the potato mixture
  13. Sprinkle cheese on top of each potato and place in oven for 10 minutes or until cheese is bubbling
  14. Add a dollop of sour cream and serve immediately
