How To Make The Sweet Potato Casserole
Ingredients
- 3 cups cooked mashed sweet potatoes (4-5 medium potatoes)
- 3/4 to 1 cup white sugar
- 2 eggs beaten
- 1/2 teaspoon salt
- 1/2 cup butter (substitute margarine if you want)
- 1/2 cup raisins
- 1/3 cup milk
- 1 teaspoon vanilla
Topping Ingredients
- 3/4 cup light brown sugar
- 1/2 cup flour
- 1 cup chopped nuts (pecans)
- 1/3 cup softened butter (substitute margarine if you want)
Directions
- Microwave the sweet potatoes. Wrap each potato in clear plastic wrap and cook in microwave. 6 minutes per potato should be about right, but check to make sure they are cooked completely. Don’t poke a hole in them. Be careful when unwrapping the plastic…because of the hot steam
- Remove the skin from the sweet potatoes. Do Not refrigerate the potatoes at this point. It will make them grainy.
- Mash the sweet potatoes
- Mix into the mashed sweet potatoes: the sugar, eggs, salt, butter, raisins, milk, and vanilla.
- Pour the mixture into a 9×9 baking dish
- Now mix the topping ingredients together.
- Spread the topping on the top of the potato mixture
- Bake at 350 degrees for 25 minutes
