How To Make Cream Potato Soup With Bacon
Ingredients
- 3 pounds of Russet potatoes, washed, peeled and cut into 1/2 inch cubes
- 1 pound of cheddar cheese, grated
- 1/3 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 pound of bacon, chopped (smoked bacon is good!)
- 1/4 cup of butter
- 2 leeks, washed and chopped
- 1 onion, chopped
- 1 carrot, chopped
- 1/2 cup flour
- 1 clove of garlic, minced
- 6 cups of chicken broth (you can use stock if you have lots of energy and time)
- 1 cup heavy cream
Directions
- You are going to need a large saucepan to make this soup
- In the saucepan cook the bacon over medium heat until crisp
- Remove the bacon and set it aside. Drain all but 1 tablespoon of the bacon drippings.
- Add the 1/4 cup of butter in with the 1 tablespoon of bacon drippings and heat until the butter melts.
- Add the garlic, onion, carrots, and leeks and cook for 5 minutes.
- Stir in the flour and then slowly stir in the chicken broth.
- Add the potatoes and bring to a boil.
- Now reduce the heat and simmer for about 15-20 minutes or until the potatoes are tender.
- In a large bowl mix in the cheese with about 1/4 of the hot soup. Mix until smooth.
- Return the cheese mixture to the large pot with the soup.
- Very slowly mix in the salt & pepper and the heavy cream.
- Bring the soup almost to a boil…But stop before a full boil is reached.
- The soup is now ready to serve…Yum Yum
