Here is a very tasty Oven Roasted New Potatoes Recipe with Cucumber and Horseradish.  A roasted potato is so much more healthy than a fried potato.  And the really great part about roast potatoes is that they taste just as good as their fried cousins.

If you don’t think adding cucumber and horseradish to this oven roasted new potatoes recipe makes it  a side dish to die for….then you are in for one big surprise!!  Oh, and did I mention that these roasted potatoes have garlic????

How To Make Oven Roasted New Potatoes

Ingredients

  • 1 pound of new potatoes, peeled and cubed
  • 2 1/2 cups of cucumber, thickly sliced
  • 1 cup of horseradish cream
  • 1 tablespoon sunflower oil
  • 1 tablespoon minced garlic
  • 1 teaspoon fresh cilantro, chopped
  • 1 teaspoon dried parsley

Directions

  1. Preheat oven to 400F
  2. In a large bowl, combine the cilantro, oil, parsley, and garlic.
  3. Into the mixture stir in the potato cubes, horseradish, and cucumbers.
  4. Make sure that the potatoes get evenly coated.
  5. Place the potatoes in a roasting pan or non-stick baking sheet.
  6. Roast the potatoes for one hour or until done.
