Here is an easy, simple, and quick Potato Soup With Whipping Cream Recipe for your soup cup.  Not only does the Whipping Cream make this Potato Soup good, it is also makes it thick.

You might ask why we didn’t make this a Whipping Cream Cheese Potato Soup.  Well the answer is pretty simple:  My wife thinks I’m gaining just a little too much weight and the cheese potato soup will only make the problem worse.  Besides, look at some of the other potato recipes on this site and you will see that there are plenty of Cream Potato Soup with Cheese Recipes.  This is a “Make Ahead Recipe”.

How To Make Potato Soup With Whipping Cream

Ingredients

  • 8 ounces of potatoes, cut into 1 inch cubes
  • 2 garlic cloves, halved
  • 1 cup onion, sliced
  • 2 tablespoons butter
  • 5 cups chicken broth
  • 1/2 cup of whipping cream
  • 1 tablespoon of dry sherry
  • 1 teaspoon of thyme, minced

Directions

  1. In a large pot melt the butter
  2. Add the sliced onions to the butter in the pot and saute for about 20 minutes. The onions should look brown and become tender
  3. Mix in the garlic and let its flavor mix with onions and butter for a minute or two
  4. Now add the broth and potatoes and bring to a boil
  5. Reduce the heat, cover the pot, and let simmer for about 25 minutes. Make sure the potatoes are tender.
  6. Let the soup cool a little bit. You don’t want to burn yourself on the next step
  7. You can perform this next step twice so that the blender does not get too full. Pour the soup into a blender and puree
  8. Pour the soup back into the pot
  9. Stir in the cream, sherry, and thyme
  10. Simmer the soup for about 10 minutes and season with salt & pepper
