How To Make The Easy Potato Salad Recipe

Ingredients

• 3 pounds of red bliss potatoes, washed and left unpeeled
• 1 large red bell pepper, diced small
• 1 cup red onion, chopped
• 4 eggs, hard boiled and chopped
• 3/4 cup mayonnaise, light
• 2 tablespoons of yellow mustard
• 1 1/2 teaspoon of seasoned salt
• 1/2 teaspoon of black pepper
• 1 teaspoon garlic powder
• 2 teaspoons sugar

Directions

1. Cube the potatoes into 1 inch squares
2. Boil the red bliss potatoes until they are tender but not mushy.  You are not making mashed potatoes so be careful.  You need to leave a little bit of firmness in the potato.
3. When the potatoes are finished cooking, place them in the fridge for about an hour so that they can cool.
4. Now put the potatoes in large bowl and add all the other ingredients.  Toss so everything is well mixed.  Try not to break up the potatoes.
5. Refrigerate until you are ready to serve.
