Cooking meatloaf is one of the first meals most people learn when out on their own.  I learned how to cook meals when I was in college.  Cooking dinner was essential if I wanted to eat.  Mom wasn’t around to cook for me.  I was in shock!   Yep, cooking sure seemed easier when I was at home.  But in college I needed a meal quick.  And Crock Pot Meatloaf was a simple easy recipe.

How To Make Crock Pot Meatloaf

Ingredients

  • 2 pounds of very lean ground beef
  • 1 pound of pork sausage
  • 1/4 cup milk
  • 2 eggs
  • 2 slices of white bread
  • 1 small onion (about 1/2 cup) finely chopped or grated
  • 1/4 teaspoon of salt

Directions

  1. Grate the onion into a large mixing bowl.
  2. Soak the bread thoroughly in the milk. Then tear the bread into small pieces as you add it into the mixing bowl along with the milk.
  3. Now add the eggs and beat the entire mixture until smooth.
  4. Mix together the ground beef and the pork sausage.
  5. Now add the meat combination to the mixing bowl with the rest of the ingredients and mix until well combined.
  6. Form the entire mixture into a round form about 4 inches high.
  7. Place in the Crock Pot and cook the meatloaf on high for 3-4 hours.
  8. About 2 hours into the cooking drain out the melted fat.
  9. When finished cooking drain the melted fat once again.

Is it any wonder that meat loaf is America’s favorite ground beef recipe?  Well it is next to the king of the hill, “The Hamburger”.   A good meat loaf recipe is something that just can’t be beat.  Not only is it a quick simple dish to make, but it is also a inexpensive, or cheap if you will, main course.

The best meat loaf I remember eating was the one my wife made the year that we got married.  I’ll tell you I married one quick gourmet.  And without a doubt she knew how to make meat loaf. 

I think I remember this particular meatloaf because she made it in a slow cooker or crock pot right after she cooked the creamy potato soup.  When it came to cooking meals on a budget, she was the queen.  Really a “World Champion”.

Of course cooking meatloaf for dinner doesn’t seem like that big of a deal.  But if you don’t have money to go out to eat and want some of the side dishes that go along with a loaf recipe then all of a sudden the nights menu starts looking mighty good.

Anyway, we had potato soup, mashed potatoes, and sweet potato biscuits.  All for under $6.00.  This was a few years ago but still quite a bargain and filling. 

While my wife was cooking dinner I was watching TV.  It sounds kind of like a sitcom!  But when it was time to mash the potatoes I was in the game.  I like to use a potato ricer for mashed potatoes.  Much easier than those hand mashers and you don’t get the lumps.  Hint:  I love to put garlic in my mashed potatoes!!

In my opinion the best meatloaf recipe is a quick, simple, and basic loaf recipe.  It makes for a great dinner, easy lunch, super leftovers, and it tastes good hot or cold.

We have now been married for a while and my wife still cooks meatloaf.  And my wife’s meatloaf recipe is still delicious.  I will never complain.  I think it makes it a easy kitchen day for her when she cooks in the crock pot or slow cooker.  And if she is cooking at home it should be easy.

A few last thoughts about the easy cooking meat loaf recipe.  Like I said you can make it ahead, eat it as leftovers, and it truly is one of the easy simple recipes.

If you look comfort food up in the dictionary you will see a big picture of a meatloaf.  I’m not kidding.  Any homemade recipe that you can make from scratch and cook it in a crock pot should have a picture in the dictionary under comfort food.

My wife’s dinner menu has expanded quite a bit since the early days of our marriage.  She went from knowing “How To Make Meatloaf”  to becoming one quick gourmet.  She can make just about anything…And she does.  Usually in a crock pot or slow cooker.

Now I will be the first to admit that you don’t have to attend cooking school in order to be a good cook.  Who really cooks those recipes that you see the top chefs making on TV or in those glossy magazine?

Cooking recipes should be able to be made by the average person.  The recipe shouldn’t be so difficult that it requires a special education to prepare.  Cooking potatoes or cooking meat is basic.  You make good, healthy, nutritious meals for yourself and your family with simple ingredients.

Of course easy cooking in the microwave is another alternative.  If you are in a hurry and need a quick meal then the microwave is the way to go.  It is not my first choice but I do use it on occasion.  Sometimes I will bake a potato in the microwave simply because it is quick.

    I never knew that you could make meatloaf in a crock pot! I love coming here and seeing the new recipes you come up with and I learn something new quite often.

    You would be suprised what you can cook in a crock pot. Meat loaf is just the beginning. I remember when my mom would cook meat loaf in the slow cooker. She also was able to whip up just about every other meal you could think of in a crock pot. Keep checking back…there will be big news concerning my crock pot recipes!!!

    Rather than throwing the meatloaf drippings away, why not wait until everything is done cooking, remove the meatloaf and keep it warm, add some water to the drippings, and then take a little flour stirring it into a smooth paste with some water, then add it to the water and dripping and let it thicken while stirring and come to a boil making a wonderful gravy that you could use on top of the meat loaf or on some potatoes you could have thrown into the crock pot about half way through. You might need to season the gravy with a little salt and pepper or onion salt according to your taste. A good rule of thumb is to use 2 T flour for every 8 oz. of liquid (drippings + water).
