How To Make Mashed Potato Casserole

Ingredients

  • 5 lbs of white potatoes that we need to peel and cut into 1 inch chunks. We are using white potatoes because of their low starch content.
  • 1/4 cup of parmesan cheese
  • 1 cup (approx 4 ounces) cheddar cheese, shredded
  • 1/4 cup of blue cheese crumbles
  • 3 ounces of softened cream cheese
  • 8 ounce tub of sour cream
  • Garlic Salt, One Teaspoon
  • Paprika, 1/4 teaspoon

Directions

  1. Place the peeled cubed potatoes in a large sauce pan.
  2. Cover the potatoes with water
  3. Boil until the potatoes are fork tender
  4. Mash the potatoes in the sauce pan (don’t over do it)
  5. In a separate large mixing bowl–beat the cream cheese, blue cheese, and cheddar cheese together.
  6. Now into the cheese mixture beat in the sour cream, garlic salt, and paprika.
  7. Make sure this mixture is smooth
  8. The oven should be preheated to 350F
  9. Stir the cheese mixture in with the mashed potatoes. Make sure it is blended well.
  10. If the potatoes seem a little stiff add milk. Just one tablespoon at a time. Do not add to much milk.
  11. Now spoon the mashed potatoes into a 13×9 baking dish
  12. Sprinkle the parmesan cheese on top of the potatoes
  13. You are going to bake for 35-40 minutes uncovered
  14. The mashed potato casserole is done when the potatoes are hot and top is lightly browned.

I do make a very good tasting pepper casserole  with mashed potatoes.  There is no end to the combinations you can make in the oven.

If you are on a low carb diet, like the South Beach Diet or the Atkins diet you can substitute cauliflower for potatoes.  I’m not going to get into that right now, but just be aware that people do that.  That’s right…they make cauliflower mashed potatoes.

I never seriously though about becoming a chef or a full time cook.  Even though I enjoy cooking I don’t have any desire to spend all of my time in the kitchen.  Cooking school was not one of my dreams.  Although I do watch the pros on The Food Network.  They are always using kitchen gadgets in ways I never thought of.  But in all honesty, Rachel Ray and Paula Deen can be the stars.  I just want to be able to whip up quick dinner recipes.

    Sounds really good actually, although that’s a lot of different cheeses. :-) A couple of tablespoons of chives or green onion would probably add a nice accent to this as well. Thanks!

    Hey Frugal…liked your post on not scrimping when it comes to knives!!!
    Your right…there are a whole lot of different cheeses on this mashed potato casserole. Four different types to be exact. I like a cheesy potato casserole.

    While this casserole recipe calls for cheese, other recipes on this site do very well without the cheese. What I was really going for was an easy homemade casserole that people could make enjoy with any meal–even a holiday meal.

    The chives and green onions that you mentioned really would be a good and tasty addition. In some weird way it would also make this a more healthy recipe. Is that possible with all that cheese?
