How To Make The Healthy Gourmet Potato Salad
Ingredients
- 6 large potatoes (about 6lbs), peeled
- 1 cup of Italian style salad dressing
- 8 hard boiled eggs, sliced
- 1 bunch of green onions, slice them thin
- 3 sticks of celery, chopped up
- 2/3 cups of chopped up and seeded cucumber, peeled
- 1 green pepper, chopped
- 1 cup of frozen peas, thaw them
- 1 cup of mayo
- 2/3 cups of sour cream
- 2 teaspoon of mustard
- 1 teaspoons of salt
- 1/8 teaspoon of pepper (to taste)
Directions
- Put the potatoes in a large pot. Cover them with water and bring to a boil.
- Reduce the heat, cover, and cook for about 35 minutes or until fork tender.
- Cool for 20 minutes or until the potatoes are easy to handle.
- Dice the potatoes and then place the potatoes in a large bowl.
- Add the salad dressing and toss the potatoes until they are well coated.
- Let them stand for 30 minutes. You want the flavor of the salad dressing to get into the potatoes.
- Stir in the egg slices.
- Stir in the green onion, celery, green peppers, cucumbers, and peas.
- Combine the mayo, sour cream, mustard, salt & pepper.
- Now add the combination to the potato mixture.
- Toss the potatoes gently in order to coat them with the mixture.
