Indian Food is characterized by a wide variety of regional styles and sophisticated use of herbs and spices. The staple foods in the region are rice (especially in the south and the east) and wheat (predominantly in the north). Spices originally native to the Indian subcontinent that are now consumed world wide include black pepper; in contrast, hot chili peppers, popular across India, were introduced by the Portuguese. 

Indian Food is very popular in the United States. There are many restaurants that specialize in Indian Recipes. Immigrants from India have popularized Indian Cooking and made it more accesable to the average person.  You should try Indian Food it is very good.

Curry

There are probably as many Indian curries as there are Indian villages. The exact mix of spices changes from household to household but almost always starts with the toasting of spices in a pan. Practically any dish that begins with toasted spices can be considered a curry. Traditionally, a common herb used is the curry leaf (which lends its name to the entire classification of prepared foods) but turmeric (providing the familiar yellow), coriander, ginger, garlic, chili, black pepper, and tamarind are just as common to be found in the mix. In fact, so many spices (sometimes more than twenty!) go into the prepared curry that it can be daunting to chef’s new to Indian cuisine. Perhaps this is the reason why the British began to prepackage spice mixtures as “curry powder”. 

Indian curries are typically named after the main ingredient (excluding the spices). For example, potato curries and chicken curries are quite common. In addition, depending on the region, the curry can be a fairly dry dish (like a stir fry), a heavily sauced dish, or everything in between. Some regions utilize coconut while others emphasize ghee (a clarified butter) or dairy cream.

How To Make Aloo Keema

Ingredients 

1KG Beef or Mutton minced

300g potatoes

2 onions – finely chopped

3 garlic cloves crushed

1 ginger, fresh 1/2″ piece

1/4 cup vegetable oil

1 tsp. red chili powder.

1/2 Tsp. turmeric powder

Salt 2 tsp. or to taste.

1 tsp. level ground cumin.

2 tsp. yogurt.

2 tomatoes, chopped coarsely

3 tbs. Fresh coriander leaves chopped.

1/2 Tsp. garam masala for garnish.

1 green chili chopped.

Directions 

1.Fry onions in a heavy based sauce pan over medium heat, stirring time to time.
2. When onions are soft but not brown add minced meat, garlic and cook over low heat. Stirring all the time and making sure that all the water is evaporates and meat turns brown.
3. Add chopped tomatoes, yogurt, all spices, salt and cook for five to ten minutes, stirring all the time. Add a bit of water if feel necessary during the process.
4. Add potatoes and mix it well, add one cup of water, cover and leave to cook for 30 minutes over low heat or until potatoes are cooked. If water dries before potatoes are cooked, add more water.
5) Add garam masala, green chili and coriander leaves. Mix well and serve hot with Roti.
