Ingredients
- 1 pound of boneless, skinless chicken thighs
- 1 red bell pepper, chopped
- 1 large onion, chopped
- 1 stalk celery, diced
- 1 15 ounce can of stewed tomatoes, undrained & chopped
- 1 clove of garlic, minced
- 1 tablespoon sugar
- 1 teaspoon paprika
- 1 teaspoon Cajun seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 pound of shrimp, peeled, deveined and cleaned
- 1 tablespoon fresh lemon juice
- Louisiana style hot sauce, to taste
- Hot cooked rice
Directions
- First put the chicken thighs in your crock pot
- Now add in the chopped bell pepper, chopped onion, diced celery, the undrained stewed tomatoes, minced garlic, sugar, paprika, Cajun seasoning, salt & pepper
- Set the crock pot to LOW and cook either on low for 8-9 hours or on high for 3-4 hours. Make sure the pot is covered
- After the initial cooking you will add the shrimp, lemon juice, and hot sauce. Cover the pot and cook on Low for 1 hour or until the shrimp is done.
- Serve over hot rice (you can figure the rice out yourself)
