New Potatoes tend to be more acidic, causing milk to curdle, so if using them, use cream or undiluted evaporated milk, rather than regular milk.

New Potatoes are not a separate variety of potato.  They are just harvested earlier than a mature potato.  Sometimes they will be referred to as creamers or fingerlings.

Normally the skins of new potatoes are not peeled.  The reason for this is that the skin, because the potato is so young, is not very thick. 

New Potatoes are very well suited for boiling or roasting.  They also cook up well in a crock pot or slow cooker.

If you have never served a dinner with new potatoes now is the time for you to try it out.
