When Cooking Jambalaya you should always remember that you are making a recipe that has its roots in history.  You can easily trace Jambalaya recipes back to the 1700’s.  This Jambalaya recipe,  like all Jambalaya recipes is a mix of all different types of ingredients.  It is not unusual for Cajun foods to be a mish-mash of what happens to be on hand.  Rice is one of the main ingredients of any Jambalaya food.  You might be surprised to find out that Louisiana is one of the top rice producing states in the country.  Of course that is fitting when you take into account that it is included in a Cajun food recipe.

You can tell from the title of this post that we are talking about one of our vegetarian recipes.  Just because it is meatless does not mean it is tasteless.  As a matter of fact it taste really good.  Healthy vegetarian recipes are something you should include in your dinner or lunch menu.  We can all stand to eat a little more healthy.

How To Make Vegetarian Creole Jambalaya

Ingredients

  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 1/2 cup chopped celery
  • 3 cloves garlic, minced
  • 2 cups water
  • 1 can (14.5 oz) diced tomatoes with their juice
  • 1 can (8 oz) tomato sauce
  • 1 1/2 teaspoons dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1 cup brown rice
  • 1 can (15 oz) butter beans, rinsed and drained
  • 1 can (15 oz) small red beans, rinsed and drained

Cooking Directions

  1. Preheat the oven to 350F
  2. In a large nonstick skillet, heat the oil and add the onion, bell pepper, celery, and garlic.  Sauté over medium-high heat until the vegetables are tender, 3-4 minutes. 
  3. Add the water, tomatoes with their juice, tomato sauce, thyme, basil, oregano, pepper flakes, and rice.
  4. Transfer to a 2 1/2 quart casserole and stir.
  5. Cover and bake for 30 to 35 minutes, or until the rice has absorbed the liquid.  Stir in the butter beans and red beans and return to the oven, covered, for another 15 minutes, or until heated through.

This is why casserole recipes are so popular.   You can make just about anything in a casserole.  And when Cooking Jambalaya in a casserole and have it be a vegetarian dish just makes it all the more special.
