There must be as many roast beef recipes as there are sizes of this particular cut of meat.  One of the first decisions you have to make when cooking roast beef is how you are going to present the “beef roast”.  Will it be alone is a baking dish?  Will you make it as part of a casserole?  Maybe you have loads of kids to feed after a baseball game and will just give everyone a roast beef sandwich.  The question on how to cook roast beef really comes down to who you are feeding.  Today we are presenting a pretty easy roast beef recipe.

How To Make Roast Beef And Potato Casserole

Ingredients

  • 2 1/2 to 3 cups finely chopped roast beef
  • 1/2 cup finely chopped onion
  • 1 cup roast beef gravy or prepared brown gravy
  • 2 tablespoons dry white wine
  • 1/4 teaspoon dried thyme, crumbled
  • 1/4 teaspoon dried rosemary, crumbled
  • 1/2 to 1 teaspoon salt, or more to taste
  • 1/4 teaspoon pepper
  • Beef broth or water, if needed
  • 2 cups cooked mashed potatoes
  • 2 tablespoons of butter
  • 1 large egg
  • 1/2 to 1 cup shredded cheddar cheese

Cooking Directions

  1. Preheat oven to 350F
  2. In a large bowl, combine the beef, onion, gravy, wine, thyme, rosemary, salt, and pepper.  Stir in beef broth or water if the mixture seems dry (it should have the texture of a meat loaf mixture before it is shaped and baked).
  3. Put the mixture in a shallow 2-quart casserole.
  4. Combine the mashed potatoes with the butter and egg in a medium bowl.  Mix well and then spread over the meat mixture.  Sprinkle with the cheese.
  5. Bake, uncovered, for 30 minutes, or until browned and bubbly.

The question on how to cook roast beef is a familiar one.  Probably because there are so many different ways to cook the dish.  There is roast beef marinade, roast beef in a slow cooker, bbq roast beef, and of course the always popular Italian roast beef.
