Ingredients

  • 1 pound lean ground beef
  • 1 cup chopped onions
  • 1 can (14.5 ounces) diced tomatoes with their juice
  • 2 teaspoon Worcestershire sauce
  • 1/2 teaspoon chili powder
  • 2 teaspoons salt
  • 3 medium (russet) potatoes, peeled and sliced
  • 1 1 /2 cups fresh or frozen corn kernels
  • 1 1/2 cups frozen peas thawed
  • 1 green bell pepper, seeded and chopped
  • 1/3 cup all-purpose flour
  • 1 1/2 cups shredded Cheddar cheese

Cooking Directions

  1. Preheat oven to 375F
  2. Coat a 9×13 inch baking dish with cooking spray
  3. In a large bowl, mix the ground beef, onions, tomatoes with their juice, Worcestershire, chili powder, and salt.
  4. Pat the mixture into a smooth layer in the casserole.  Spread the potatoes over the meat layer.
  5. Combine the corn, peas, and green pepper in a medium bowl, add the flour, and toss to coat the vegetables.  Spread in an even layer over the potato layer.
  6. Coat a sheet of aluminum foil with cooking spray and cover the casserole tightly.
  7. Bake for 45 minutes.
  8. Uncover, sprinkle with cheese, and bake for 10 minutes longer, or until the potatoes are tender.
  9. Cut into squares and serve.
