Ingredients
- 1 pound lean ground beef
- 1 cup chopped onions
- 1 can (14.5 ounces) diced tomatoes with their juice
- 2 teaspoon Worcestershire sauce
- 1/2 teaspoon chili powder
- 2 teaspoons salt
- 3 medium (russet) potatoes, peeled and sliced
- 1 1 /2 cups fresh or frozen corn kernels
- 1 1/2 cups frozen peas thawed
- 1 green bell pepper, seeded and chopped
- 1/3 cup all-purpose flour
- 1 1/2 cups shredded Cheddar cheese
Cooking Directions
- Preheat oven to 375F
- Coat a 9×13 inch baking dish with cooking spray
- In a large bowl, mix the ground beef, onions, tomatoes with their juice, Worcestershire, chili powder, and salt.
- Pat the mixture into a smooth layer in the casserole. Spread the potatoes over the meat layer.
- Combine the corn, peas, and green pepper in a medium bowl, add the flour, and toss to coat the vegetables. Spread in an even layer over the potato layer.
- Coat a sheet of aluminum foil with cooking spray and cover the casserole tightly.
- Bake for 45 minutes.
- Uncover, sprinkle with cheese, and bake for 10 minutes longer, or until the potatoes are tender.
- Cut into squares and serve.
