Penne Pasta is a favorite of mine.  The four cheeses make it pure heaven in a plate.  This is a great recipe for a Sunday brunch or a Saturday outdoor lunch.  I’m guessing you should be able to whip up this penne pasta recipe in less than a half hour.  The baking time is only 20 minutes.  So this dish won’t be taking up a large portion of your day.

How To Make Penne Pasta With Four Cheese

Ingredients

  • 2 cups milk
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1 1/4 cups shredded provolone cheese
  • 1 1/4 cups shredded mozzarella cheese
  • 1 1/4 cups shredded Swiss cheese
  • 6 tablespoons grated Parmesan cheese, divided
  • Salt & Pepper
  • 2 large egg yolks, beaten
  • 1/2 pound penne or another tubed shaped pasta, freshly cooked and drained

Cooking Directions

  1. Preheat oven to 375F
  2. Butter a 2 quart casserole.
  3. In a large saucepan, heat the milk, basil, and red pepper to a simmer.  Toss the provolone, mozzarella, Swiss,  egg yolks, and 4 tablespoons of the Parmesan cheese together in a medium bowl.  Add to the milk, a handful at a time, stirring after each addition.  continue stirring until the cheese is melted.
  4. Season with salt & pepper and mix in the pasta.  Turn into the casserole and sprinkle with the remaining 2 tablespoons Parmesan cheese.
  5. Bake for 20 minutes, or until heated through. 

If you are a vegetarian that goes meatless or a person that eats meat it won’t matter.  This Baked Penne Pasta Recipe will be loved by one and all.
