Ingredients
- 2 pounds russet potatoes, peeled and diced
- 1 cup of water
- 1/3 cup butter, cut into small pieces

- 1/2 teaspoon black pepper
- 1/2 cup finely chopped green onions
- 1/2 to 3/4 cup (2-3 ounces) shredded cheddar cheese
Cooking Directions
- Combine the potatoes and water in your slow cooker | crock pot.
- Dot the potatoes with butter.
- Cover and cook on low for 6 hours or on high for 3 hours. Make sure the potatoes are tender.
- Transfer to a large mixing bowl.
- Use an electric mixer at medium speed to whip the potatoes until well blended.
- Add milk, salt and pepper; whip until well blended.
- Stir in the green onions and cheese; cover. Let stand 15 minutes to allow the flavors to blend and cheese to melt.
