If you always wanted to know how to make a potato pie you have come to the right place.  We have assembled a step by step recipe for a cheese potato pie.

You might remember, it wasn’t too long ago, that we posted a recipe for a bourbon pecan sweet potato pie recipe that was very popular.  Hopefully this one without the bourbon will be just as popular.

How To Make A Potato Pie

Ingredients For The Crust

  • 1/2 cup butter at room temp plus extra for the pan
  • 3/4 cup instant mashed potato flakes
  • 3/4 cup all purpose flour
  • 1/4 cup grated parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 cup water

Ingredients For The Filling

  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup instant mashed potato flakes
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 cup sliced mushrooms

Ingredients For The Egg Mixture

  • 5 large eggs
  • 1/4 cup sour cream
  • 3/4 teaspoon salt

Directions

  1. Preheat oven to 350F
  2. Butter a 9 inch pie pan
  3. Prepare The Crust:  In a medium bowl, stir the 1/2 cup butter, 3/4 cup mashed potato flakes, the flour, parmesan cheese, and 1/4 teaspoon salt together until well mixed and crumbly.  Drizzle the water over the dry ingredients and stir with a fork until the dough holds together.
  4. Press the dough into the pie pan with your fingers and flute the edges.  Bake for 10 minutes, or until the crust feels dry.
  5. Prepare The Filling:  Spread 1/2 cup of the shredded cheese, the 1/4 cup  mashed potato flakes, tomatoes, and mushrooms evenly over the top.  Top with the remaining 1 cup cheese.
  6. Prepare The Egg Filling:  Beat together the eggs, sour cream, and 3/4 teaspoon salt.  Carefully pour over the ingredients in the pie shell, poking a hole here and there to allow the mixture to permeate the filling.
  7. Bake for 25-30 minutes, until a knife inserted in the center comes out clean and the filling is set.  Cool for about 10 minutes before cutting and serving.
