Ingredients
- 1 1/2 pounds of ground beef
- 1 gently beaten egg
- 1 cup bread crumbs (not hard)
- 1/4 cup of milk
2 tablespoons dry onion soup mix - Dash of pepper
2 tablespoons of salad oil - One pound can of tomatoes
1/4 cup cold water - 2 tablespoons of all purpose flour
- 1 tablespoon beef flavored gravy base
1 1/2 cups carrots. Sliced lengthwise and cut into thirds - 2 medium onions, quartered
- 1 cup of sliced celery chunks
How To Make The Meatball Casserole Recipe
- Completely combine the meat, egg, bread crumbs, milk, soup mix, and pepper.
- Shape into 8 to 10 meatballs.
- Brown lightly in hot oil in large skillet.
- Remove meatballs and drain off excess fat.
- Add tomatoes.
- Blend water, flour, and gravy base; stir into the tomatoes.
- Cook till mixture thickens and bubbles.
- Add meatballs, carrots, onions, and celery.
- Cover and simmer for 15 minutes.
- Pour into 2-quart casserole.
- Cover and bake at 350f for 1 hour or till vegetables are tender.
- Should make enough for 4 or 5 people.
A really nice thing about this dish is that it can easily be stored. A frozen meatball casserole will taste just as good as a fresh one once it is defrosted and cooked up.
While this casserole dish is not strictly a Italian meatball dish it comes close enough that it can be served with garlic bread and a good minestrone soup.
