<li>4 large baking potatoes (Russet Potatoes)</li>
<li>1/2 cup of sour cream</li>
<li>1 cup of American cheese, diced</li>
<li>1 cup cheddar cheese, grated</li>
<li>1 pound of bacon</li>
<li>1/2 cup red onion, diced</li>
<li>1/2 cup yellow onion, diced</li>
<li>4 scallions, chopped</li>
<li>1/4 cup of milk (cold)</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Preheat oven to 400F (Do not microwave&#8211;Please)</li>
<li>Bake the potatoes for 1 hour or until they are fork tender or easy to squeeze in the middle</li>
<li>While the potato is baking you can dice the bacon and saute in a pan until cooked. Remove the bacon from the pan and reserve the fat</li>
<li>Now you will need to cook the red and yellow diced onions in the bacon fat until they are soft</li>
<li>Set the bacon and onions aside</li>
<li>When the potatoes are done remove from the oven, set them aside until they have cooled enough where you can handle them</li>
<li>Now that the potatoes are cool enough to handle: Cut the potatoes in half lengthwise and scoop all of the pulp into a large bowl. Be careful not to poke through the shells.</li>
<li>Stir in the sour cream and milk to the potato mixture</li>
<li>Mix in the American Cheese, onions, and most of the bacon. You are going to keep some of the bacon in reserve for a topping on the potatoes</li>
<li>Spoon the mixture back into 4 of the potato shell halves. The potatoes shouldn&#8217;t be flat in the shells, they should look like a mound</li>
<li>Place the potatoes back in the oven and bake for 1/2 hour</li>
<li>Remove the potatoes from the oven and sprinkle the cheddar cheese, scallions, and remaining bacon on top of the potatoes.</li>
<li>Bake for 5 more minutes</li>

<li>1/2 pound cooked ground beef-seasoned with 1 teaspoon fajita seasoning (if fajita seasoning is not available use 1/4 teaspoon garlic powder, 1/4 teaspoon oregano, and a little salt &amp; chili pepper to taste.</li>
<li>1 cup Jalapeno Jack Cheese (for a milder version to serve the little ones, use cheddar or regular Jack cheese)</li>
<li>1/2 cup sour cream</li>
<li>1 cup chopped tomato</li>
<li>1/4 cup chopped Cilantro</li>

<li>2 tablespoons butter</li>
<li>1/4 of a large onion chopped</li>
<li>1 clove garlic minced</li>
<li>4 baking potatoes (about 2 1/2 pounds)</li>
<li>2/3 cup all-purpose flour (about 3 oz)</li>
<li>6 cups milk (can use 2 percent)</li>
<li>1 cup (4 oz) shredded extra sharp cheddar cheese (can use reduced fat)</li>
<li>1 teaspoon salt</li>
<li>1/2 teaspoon freshly ground pepper</li>
<li>1 cup sour cream (can use reduced fat)</li>
<li>3/4 cup chopped green onions</li>
<li>6 bacon slices cooked and crumbled</li>

<h4>Directions</h4>
<ol>
<li>Preheat oven to 400 degrees</li>
<li>Pierce potatoes with a fork, bake at 400 degrees or until tender. Cool. Peel potatoes; coarsely mash.</li>
<li>In a large pot or dutch oven, melt butter over medium heat. Add the onions and garlic and saute until soft, about 8 minutes.</li>
<li>Lightly spoon flour into a dry measuring cup.</li>
<li>Place the flour into the vegetables; gradually add milk, stirring with a whisk until blended.</li>
<li>Cook over a medium heat until thick and bubbly. (about 8 minutes)</li>
<li>Add mashed potatoes, 3/4 cup cheese, salt, and 1/2 teaspoon of pepper, stirring until cheese melts. Remove from heat</li>
<li>Stir in sour cream and 1/2 cup onions.</li>
<li>Cook over low heat or until thoroughly heated. <strong>Do not boil</strong>.</li>
<li>Ladle the soup into bowls and sprinkle each with 1 1/2 teaspoon of cheese, 1 1/2 teaspoon of onion, and one tablespoon of bacon.</li>
