<h3><em><span style="text-decoration: underline;">How To Make Fried Potato Fries</span></em></h3>

<h4>Ingredients</h4>
<ul>
<li>6-8 large potatoes</li>
<li>Oil for deep frying</li>
<li>Parmigiano Reggiano (Parmesan Cheese)</li>
<li>Chili Flakes</li>
<li>Fresh Parsley</li>
<li>Salt &amp; White Pepper</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Scrub and peel the potatoes. Reserve them in a large bowl full of <span style="text-decoration: underline;">cold water.</span></li>
<li>Slice the peeled potatoes into french fries and then put them back into the cold water.</li>
<li>Drain the potato fries and dry them well on a paper towel.</li>
<li>Heat the oil in a deep fryer to 320F and deep fry the fries <strong><em><span style="text-decoration: underline;">until they are half done.</span></em></strong> They should be cooked through but pale and soggy looking. Remove from oil, drain and let cool for 20 minutes.</li>
<li>While the fries are cooling dice the parsley, grate about 2 tablespoons of the Parmigiano Reggiano, and mix all together with 1 tablespoon of chili flakes.</li>
<li>Now reheat the oil to 375F and add the fries back in until they are brown and crisp.</li>
<li>Drain again and toss with salt &amp; pepper and the Parmesan, chili, and parsley mix. Careful not to add to much salt&#8230;the cheese is already a bit salty.</li>
