<p>But here we present to you a vegetarian Mexican casserole dish that will satisfy the most discriminating of pallets.</p>

<p><em><u>How To Make Mexican Vegetarian Casserole</u></em></p>
<p><strong>Ingredients</strong></p>
<ul>
<li><font color="#111111">1 can (15 oz) corn kernels, drained</font> </li>
<li><font color="#111111">1 can (15 oz) black beans, rinsed and drained</font> </li>
<li><font color="#111111">1 cup sour cream</font> </li>
<li><font color="#111111">1 cup tomato salsa</font> </li>
<li><font color="#111111">2 cups shredded Colby and Monterey Jack cheese (you can buy these together in one package normally labeled Co-Jack)</font> </li>
<li><font color="#111111">1 can (10 oz) diced tomatoes and green chiles with their juice</font> </li>
<li><font color="#111111">2 cups cooked rice</font> </li>
<li><font color="#111111">1/4 teaspoon pepper</font> </li>
<li><font color="#111111">1 green onion, chopped (white and green parts)</font> </li>
<li><font color="#111111">1/2 cup sliced black olives</font> </li>
<li><font color="#111111">2 cups shredded Monterey Jack Cheese (This is in addition to first)</font> </li>
</ul>
<p><strong>Cooking Directions</strong></p>
<ol>
<li><font color="#111111">Preheat oven to 350F.&#160; Coat a shallow 2 1/2 quart casserole with cooking spray.</font> </li>
<li><font color="#111111">In a large bowl, stir&#160; together the corn, beans, sour cream, salsa, combined Colby and Jack cheeses, diced tomatoes with their juice, rice, pepper, and green onion.&#160; Spoon into the casserole evenly and sprinkle with the olives and Monterey Jack cheese.</font> </li>
<li><font color="#111111">Bake for 30-35 minutes, or until bubbly.</font> </li>

<h2><em><u>How To Make Chiles Rellenos</u></em></h2>
<p><strong>Ingredients</strong></p>
<ul>
<li><font color="#111111">1/2 pound Monterey Jack Cheese</font> </li>
<li><font color="#111111">6 poblano or Anaheim chiles, roasted and peeled (Olive Oil)</font> </li>
<li><font color="#111111">8 large eggs, separated</font> </li>
<li><font color="#111111">1/3 cup all purpose flour</font> </li>
<li><font color="#111111">3/4 teaspoon salt</font> </li>
</ul>
<p><strong>Cooking directions</strong></p>
<ol>
<li><font color="#111111"><u>First we are going to cook the chiles</u></font> </li>
<li><font color="#111111">Preheat the oven to 500F and cover a baking sheet with aluminum foil.</font> </li>
<li><font color="#111111">Coat the chile peppers lightly with oil.&#160; Roast on the baking sheet in the oven.&#160; As the peppers develop charred spots, turn them over using a pair of long tongs.</font> </li>
<li><font color="#111111">Continue roasting until the peppers are charred all over, about 15 minutes in the oven.</font> </li>
<li><font color="#111111">Wrap the peppers in the foil used to cover the baking sheet.&#160; Allow to steam and cool for 10-15 minutes.&#160; <strong>Remove the stems and seeds and pull off the thin skins.</strong></font> </li>
<li><font color="#111111"><u>Now we are going to cook the Chiles Rellenos</u></font> </li>
<li><font color="#111111">Preheat the oven to 400F</font> </li>
<li><font color="#111111">Butter an 8-9 inch square baking dish</font> </li>
<li><font color="#111111">Cut the cheese into strips 1/2 inch thick and 3 inches long.&#160; Cut each chile lengthwise into 3 strips.&#160; Wrap a chile strip around each piece of cheese and set aside.</font> </li>
<li><font color="#111111">In a large bowl, beat the egg whites with an electric mixer until soft peaks form, and set aside.&#160; Without washing the beaters, beat the yolks in a small bowl until creamy, and beat in the flour and salt.&#160; Fold the egg whites into the yolk mixture.</font> </li>
<li><font color="#111111">Spread half of half egg mixture in the bottom of the casserole.&#160; Top with the chile-wrapped cheese.&#160; Cover with the remaining egg mixture.</font> </li>
<li><font color="#111111">Bake, uncovered, for 15 to 20 minutes, or until puffy and golden.</font> </li>

<h2><em><span style="text-decoration: underline;">How To Make Sweet Potatoes With Chipotle</span></em></h2>
<p><strong>Ingredients</strong></p>
<ul>
<li>3 large sweet potatoes (about 2-2 1/2 pounds), peeled and cut into 1/2 inch cubes</li>
<li>1 cup balsamic vinaigrette, divided</li>
<li>1/4 teaspoon salt</li>
<li>1/4 teaspoon pepper</li>
<li>1/3 cup minced fresh cilantro</li>
<li>3 tablespoons honey</li>
<li>2 chipotle peppers in adobo sauce, minced</li>
</ul>
<p><span style="color: #3a3a3a;"><strong>Directions</strong></span></p>
<ol>
<li>Grease two 15x10x1 inch baking pans.</li>
<li>Place the 1/2 inch sweet potato cubes into the pans</li>

<h3><em><span style="text-decoration: underline;">How To Make Baked Stuffed Potatoes</span></em></h3>

<h4>Ingredients</h4>
<ul>
<li>4 large white skin potatoes</li>
<li>1/2 cup <a title="salsa verde" href="http://www.texmextogo.com/store/PPF/parameters/34_3/more_info.asp" target="_blank">Tejano salsa verde</a> (or substitute)</li>
<li>1 tablespoon, minced green chilies</li>
<li>2-3 tablespoons butter</li>
<li>1/2 cup sour cream</li>
<li>3/4 cup grated sharp Cheddar cheese</li>
<li>salt and pepper to taste</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Preheat oven to 375F</li>
<li>Scrub and pat dry the potatoes (Do Not Peel)</li>
<li>Using a paring knife, pierce deeply into each potato before baking</li>
<li>Set potatoes directly on oven rack and bake for 1 hour or until tender</li>
<li>Remove from oven and let set for 10 minutes</li>
<li>Cut about 1/3 off the tops of the potatoes</li>
<li>Use a spoon to scoop out the pulp</li>
<li>Reserve the shells</li>
<li>Mash the pulp and stir in the chilies, salsa, butter, sour cream, and cheese</li>
<li>Add salt and pepper for taste</li>
<li>Increase oven temp to 400F</li>
<li>Fill the shells generously with the potato mixture</li>
<li>Sprinkle cheese on top of each potato and place in oven for 10 minutes or until cheese is bubbling</li>
<li>Add a dollop of sour cream and serve immediately</li>
