The potato and sausage casserole isn’t as popular as it once was. But for a breakfast dish it really can’t be beat. While we use Yukon Gold potatoes with this recipe another popular option is to make a sweet potato and sausage casserole.

It really doesn’t matter which type of potato you use the dish is going to turn out fine and everyone will like it. You can even get a bit inventive and make this dish into a sausage potato egg casserole. The versatility of the basic potato casserole recipe doesn’t end and it is custom made for breakfast.

How To Make Potato And Sausage Casserole

Ingredients

1/2 cup quick-cooking rolled oats

1 cup water

5 medium Yukon Gold potatoes

2 onions

1 pound lean ground pork

1 teaspoon salt

1 teaspoon ground allspice

Cooking Directions

Preheat oven to 350F

Butter a 5×9 inch ceramic loaf pan

In a small saucepan, cook the rolled oats in the water until the water is absorbed, about 5 minutes

Peel and shred the potatoes into a bowl, or shred in a food processor.

Peel the onions, slice thinly from top to bottom, and add to the potatoes. Stir in the cooked rolled oats, ground pork, salt, and allspice.

Press the mixture into the prepared loaf pan. Bake, uncovered, for 1 to 1 1/2 hours, or until the loaf is cooked through and registers 165F on an instant read thermometer.

Cool, slice, and serve with lingonberry preserves and brown mustard.

As you can see this dish won’t disappoint if you serve it as a breakfast sausage potato casserole. The onion adds just enough zing to make the dish interesting. And who can argue with the lingonbeery preserves and brown mustard?

Most sausage potato casserole recipes are often hastily prepared without much thought. But this sausage potato casserole recipe has been assembled with great care and could be served at a fine restaurant.

Here at the Patch potato and sausage recipes are just about as popular as any potato bacon casserole recipe. That is really saying something because bacon is king when it comes to a second ingredient in a potato recipe.

Potato sausage is a well balanced taste that you will enjoy in the casserole form. Let us know how you like it.

People like to make a Hash Brown Casserole because it is a easy recipe to put together. After all, you really don’t have to worry about peeling or slicing potatoes. A good hash brown casserole recipe will have people not even thinking that they are eating hash browns.

Hash brown casserole recipes have been around as long as potatoes and fire. I think they might have been the first casserole. I’m going to have to check my facts on that. But I could just see a bunch of cavemen and cavewomen sitting around the camp fire toasting up hash browns and sprinkling dinosaur cheese on top for taste.

How To Make The Hash Brown Casserole Recipe

Ingredients

3 large eggs

1/2 cup milk

1/2 teaspoon salt

3 cups frozen hash brown potatoes, thawed

5 tablespoons butter, melted

1 cup finely chopped cooked ham

1 cup shredded cheddar or Swiss Cheese

1/2 cup finely chopped onions

1/2 cup chopped green bell peppers

1/4 cup diced red bell peppers

Directions

Preheat oven to 425F

Mix the eggs, milk, and salt together in a medium bowl.

Blot the potatoes between sheets of paper towels to remove excess moisture.

Press the potatoes into the bottom and up the sides of an ungreased 9 inch pan.

Drizzle with the melted butter.

Bake the crust for 25 minutes, or until lightly browned.

Cool in the pan on a wire rack.

Lower the oven to 375F

Spread the ham over the bottom of the crust.

Top with cheese, onions, and green and red bell peppers.

Pour the egg and milk mixture over all.

Bake the casserole for 36-40 minutes, or until set.

Remove from the oven and let rest for 10 minutes before cutting and serving.

This is actually a pretty good hash brown potato casserole. I think you are going to enjoy it. It is pretty easy to prepare and fast to make. It will go well with lunch or dinner and the kids will certainly like it. As a matter of fact you can actually prepare this dish and make it breakfast hash brown casserole. As an added bonus this Hash Brown Casserole will make great leftovers.

An Easy Breakfast Casserole is a must for today’s busy lifestyles. Who has the time to spend hours whipping up a breakfast that will be eaten by hungry people in a hurry to get the day started? Not me, that’s for sure. That is why I love this casserole recipe. It is a fast, easy, and delicious meal that will make you understand why people like making breakfast casseroles rather than 10 course meals in the morning.

And really who can argue with cheese and bacon in your casserole? The aroma of bacon filtering through the kitchen and into the house will get the kids up and seated at the table faster than you can say rise and shine!

What makes this Mashed Potato Casserole a Finnish recipe? Good question. Well the inclusion of the “rutabagas”, which are really Swedish are often mistaken for turnips. Follow the logic. Sweden is right next to Finland. So I’m guessing some Viking housewife purloined the rutabagas recipe cooked it up for her warrior husband when he returned on his long boat and took all the credit. Sounds good to me.

This mashed potato casserole recipe is actually pretty easy to make. The fact that it is ethnic food, is Finnish food considered ethnic food, just make it a bit more exotic. Well at least it will give you five minutes of conversation around the dinner table.

How To Make Finnish Mashed Potato Casserole

Ingredients

3/4 cup (1 1/2 sticks) butter at room temperature, plus extra for the dish

7 cups chicken broth

3 pounds russet potatoes, peeled and cut into 1 1/2 inch pieces

1 1/2 pounds rutabagas, peeled and cut into 1/2 inch pieces

1 1/2 pounds parsnips, peeled and cut into 1 1/2 inch pieces

8 cloves garlic

1 bay leaf

Salt & Pepper

1 teaspoon dried thyme

3 large onions, thinly sliced

Cooking Directions

Preheat oven to 375F

Butter a 9×13 inch glass baking dish

Combine the chicken broth, potatoes, rutabagas, parsnips, garlic, and bay leaf in a 4 quart soup pot, and bring the broth to a boil. Reduce the heat, cover partially, and simmer until the vegetables are very tender, about 30 minutes. Drain well. Remove the bay leaf.

Transfer the vegetables to a large bowl and add 1/2 cup of the butter. Using an electric mixer, beat the vegetables until mashed but still chunky.

Season with salt, pepper, and thyme and transfer the vegetables to the buttered baking dish.

Melt the remaining 1/4 cup butter in a large, heavy nonstick skillet over medium-high heat.

Add the sliced onions and sauté until beginning to brown, about 5 minutes.

Reduce the heat to medium-low and cook until the onions are tender and golden brown, about 15 minutes. Season the onions with salt and pepper and spread evenly over the mashed vegetables.

Bake uncovered, until heated through and the top begins to crisp, about 25 minutes.

Am I mistaken when I say that Santa Claus and Rudolph The Red Nose Reindeer have their home in Finland? I’m pretty sure that is where the whole thing started before the bought their condo up at the North Pole.

Christmas must be one of those Finnish holidays that is a real big deal. A Finnish Christmas probably wouldn’t be complete without one of our famous mashed potato casserole recipes.

Mashed Potato Casserole is actually a dish that is served all over the world. Potato recipes are abundant in all countries because potatoes are easy to cook and inexpensive to buy. They are the original “budget food”.

But I digress….Christmas food is what most people will remember when the holidays are over. If the meal was good they will actually talk about weeks later. They will probably be talking about it during their Weight Watchers Meetings.

Did you know that there are actually two official Finnish languages? The Finnish language spoken by 93% of the population is simply called: Finnish. The other official language is Swedish. Are you starting to understand the Finnish food connection of Rutabagas with Sweden?

The Finnish culture, as you all know, is considered Nordic. And now for your lesson on Finnish culture. When you go to your Finnish friends house to try out the Mashed Potato Casserole Recipe and the other fine Finnish Cuisine that I’m sure they spent all day making for you, there are certain things you should know.

Arrive on time. The Finnish people are anal about punctuality.

Do not talk about business during dinner. It is perfectly acceptable to discuss the potato casserole that is sitting in front of you.

For heavens sake do not wear your shoes inside their house. Don’t know why, just know your not suppose to.

Call ahead and see if your friends would like you to bring some food. I guess potlucks are big in Finland.

And of course you need to help clean up after the meal.

Well there you have it, a incomplete lesson on the Finish culture and a really good, possibly the best Mashed Potato Casserole recipe you can imagine.

Pork Pie is really an English Dish. With this recipe we are taking the classical meat pie making it into a casserole with mashed potatoes. Pork Pies have been around forever. I don’t think they are very much in fashion over on this side of the pond, but our mother country still eats them like they are Big Macs.

A good pork casserole will make your mouth water. I think we have pulled out all of the stops with this one. The garlic and Dijon mustard add just the right amount of zest to this pork casserole recipe. And of course any mashed potato casserole is always a welcome sight on the dinner table.

We have several pork chop casserole recipes that are being prepared to be posted online. Many people seem to enjoy them. Admittedly they are more popular in the USA than meat pie. But this recipe is so good that I really think you should try it.
