			<content:encoded><![CDATA[<p>Did you know that <strong>Turkey Tetrazzini</strong> is just a fancy way of saying, “Turkey Casserole”?&#160; Well the truth is that this and all turkey tetrazzini recipes are casserole recipes all dressed up in their Sunday best.&#160; Not to worry, it is still a very good dish to make for a weekend dinner or even a lunch.&#160; And you full well know that you need as many recipes as possible to get rid of that Thanksgiving turkey that never seems to get finished off.</p>
<p>This turkey tetrazzini recipe is made with dry sherry, mushrooms, and noodles (vermicelli or spaghetti).&#160; For a main course casserole it is surprisingly fast and easy to make.&#160; All around the table you will hear comments regarding this famous dish that your mother and her mother used to make for you and your family.</p>
<h2><em><u>How To Make Turkey Tetrazzini</u></em></h2>
<p><strong>Ingredients</strong></p>
<ul>
<li><font color="#111111">6 tablespoons butter, divided, plus extra for the dish</font> </li>
<li><font color="#111111">5 tablespoons all-purpose flour</font> </li>
<li><font color="#111111">2 1/2 cups chicken broth</font> </li>
<li><font color="#111111">1 1/2 cups half and half or light cream</font> </li>
<li><font color="#111111">1/2 cup dry sherry</font> </li>
<li><font color="#111111">1 1/2 cups grated parmesan cheese, divided</font> </li>
<li><font color="#111111">3/4 pound mushrooms, sliced</font> </li>
<li><font color="#111111">1 package (12 oz) vermicelli or spaghetti</font> </li>
<li><font color="#111111">4 cups shredded cooked turkey</font> </li>
<li><font color="#111111">Salt &amp; Pepper</font> </li>
</ul>
<p><strong>Cooking Directions</strong></p>
<ol>
<li><font color="#111111">Preheat the oven to 375F</font> </li>
<li><font color="#111111">Lightly butter a 2 1/2 to 3 quart casserole</font> </li>
<li><font color="#111111">In a medium saucepan, melt 2 tablespoons of the butter.&#160; Stir in the flour until smooth.&#160; Whisk in the broth, half and half, and sherry.&#160; Bring to a boil, whisking constantly until thickened and smooth.&#160; Stir in 1/2 cup of the parmesan cheese.</font> </li>
<li><font color="#111111">Transfer 1 cup of the sauce to a small bowl and stir in 1/2 cup of the remaining parmesan cheese.</font> </li>
<li><font color="#111111">In a large skillet, melt the remaining 4 tablespoons butter.&#160; Add the mushrooms and sauté until lightly browned.&#160; Remove from the heat.&#160; Set aside 1/2 cup of the mushrooms in a small bowl.</font> </li>
<li><font color="#111111">Cook the vermicelli according to the package directions until tender but firm to the bite, and drain.</font> </li>
<li><font color="#111111">In a large bowl, combine the sauce from the saucepan, the mushrooms from the skillet, the hot vermicelli, and the turkey and season with salt &amp; pepper to taste.&#160; Transfer to the buttered casserole.&#160; Spoon the reserved 1 cup sauce evenly over the surface.&#160; Sprinkle with the remaining 1/2 cup parmesan cheese and top with the reserved cooked mushroom slices.</font> </li>
<li><font color="#111111">Preheat the broiler and broil the casserole 5 inches from the heat until lightly browned.</font> </li>
</ol>
<p>Easy turkey tetrazzini recipes will come in real handy when you have half a turkey left over after your Thanksgiving or Christmas dinners.&#160; I don’t know about you but I can only eat so many turkey sandwiches.&#160; The holidays are a real challenge!</p>
<p>I’m not sure of the complete story but supposedly “tetrazzini” was invented by some Italian opera singer.&#160; Why not?&#160; As good a story as any.</p>
