How To Make Baked Potato Casserole Recipe

Ingredients

4 to 5 large potatoes, bake them and then let them cool.

2 cups white sauce (or replace with mushroom soup)

1 package of mushrooms or 2 cans

1 small onion chopped in medium dice

1/2 cup cheddar cheese

1 cup sour cream

5 slices bacon, fried crisp, drained and torn into small pieces

dash of nutmeg

salt and pepper to taste

Directions

First saute the diced onions in butter until they are translucent. Set aside

In the same pan you need to saute the mushrooms until most of the moisture evaporates

Next, return the onions to the pan, along with everything else except the bacon, potatoes and cheese

Heat until “just” warm

Now….peel and slice the potatoes. In a buttered casserole dish put in a layer of potatoes, layer of sauce, sprinkle of bacon and so on. End the layering with sauce and cheese sprinkled on top.

Heat in microwave for about 12 minutes (remember the potatoes are already cooked) Or you could throw it in the oven (uncovered) for about 1/2 hour at 350 degrees

This dish is one of those that you can make ahead. When you get to grandma’s house just pop it in the micro or oven to warm up and there you go!!

Let’s Make The Scalloped Potatoes Recipe

Everybody loves scalloped potatos. Give this recipe a try and see if you don’t love it!

Ingredients

4 cups of thinly sliced potatoes (make sure they are thin or they won’t cook right)

3 tablespoons of butter

3 tablespoons of flour

1 ½ cups milk (cold)

1 teaspoon salt

1 dash of cayenne pepper or white pepper (your choice)

1 cup grated sharp cheddar cheese

½ cup grated sharp cheese to sprinkle on top

1 quart casserole dish

Method

In a sauce pan you will need to melt the butter and blend in the flour.

Give the mixture time to set up. A minute or two is fine.

Slowly, with a whisk, stir in the cold milk. Add the salt and cayenne pepper.

You should be cooking on a low heat and stirring with the whisk. The mixture should become smooth as it begins to boil.

Reduce the heat and stir in the cheese.

Lightly grease the casserole dish

Take 2 cups of the sliced potatoes and place in the casserole dish.

Pour half of the yummy cheese sauce over the potatoes in the dish.

Place the remaining 2 cups of potatoes in the dish and pour the rest of the yummy sauce on top.

Take the remaining ? cup of grated cheese and sprinkle it evenly on top.

Open the oven, place the casserole dish inside, bake uncovered for 1 to 1 ? hour. Oh, close the oven!

Click your heels together and say, “There is no potato like a scallop potato!”

Watch a couple episodes of Judge Judy.
