<li><font color="#111111">2 cups tomato sauce</font> </li>
<li><font color="#111111">1 cup water 1 teaspoon sugar</font> </li>
<li><font color="#111111">2 teaspoons salt</font> </li>
<li><font color="#111111">1/2 teaspoon pepper</font> </li>
<li><font color="#111111">3 tablespoons quick-cooking tapioca</font> </li>

<p><strong>Cooking Directions</strong></p>
<ol>
<li><font color="#111111">Preheat oven to 325F</font> </li>
<li><font color="#111111">Coat a heavy 3 quart casserole with oil</font> </li>
<li><font color="#111111">Put the meat in the casserole, and top with the potatoes, carrots, parsnips, and onion.</font> </li>
<li><font color="#111111">In a small bowl, mix together the tomato sauce, water, sugar, salt, pepper, and tapioca and pour over the meat and vegetables.</font> </li>

<p>Most people think of Mediterranean food as oily yet healthy.&#160; The contrast comes into play because people in that region of the world seem to live a long time.</p>
<p>Something else you probably don’t think about is Mediterranean potatoes being any different than American potatoes.&#160; But in this dish we specifically have chosen to use <a href="http://www.potatopatchrecipes.com/2008/12/quick-food-roasted-red-potato-salad-recipe/">red potatoes</a> that have been grown in that region of the world because they have the perfect essence to be prepared in the crock pot or slow cooker.</p>
<p><em><u>Cooking Mediterranean Potato Recipe</u></em></p>
<p><strong>Ingredients</strong></p>
<ul>
<li><font color="#111111">3 medium red potatoes, cut in half lengthwise, then crosswise into pieces</font> </li>
<li><font color="#111111">2/3 cup fresh or frozen pearl onions</font> </li>
<li><font color="#111111">Nonstick garlic-flavored cooking spray</font> </li>
<li>3/4 tablespoon Italian Dressing </li>
<li>1/4 teaspoon black pepper </li>
<li>1 small tomato, seeded and chopped </li>
<li>2 ounces (1/2 cup) feta cheese, crumbled </li>
<li>2 tablespoons chopped black olives </li>

<ol>
<li>Place the potatoes and onions in a 1 1/2 quart soufflé dish. </li>
<li>Spray potatoes and onions with cooking spray; toss to coat. </li>
<li>Add Italian seasoning and pepper; mix well </li>
<li>Cover the dish tightly with foil </li>
<li>Tear off 3 (18&#215;3 inch) strips of heavy duty foil.&#160; Arrange to resemble wheel spokes.&#160; Place the soufflé dish in center of strips. </li>
<li>Pull foil strips up and over dish to make handles and place dish into your slow cooker. </li>
<li>Fill your slow cooker with hot water to about&#160; 1 1/2 inches from top of soufflé dish. </li>
<li>Cover and cook on low for 7 to 8 hours. </li>
<li>Use the foil handles to lift dish out of the crock pot. </li>
<li>Stir tomato, feta cheese and olives into the potato mixture. </li>
