<li>Wash the Sweet Potatoes.  Leave the skins on.</li>
<li>Pierce each Sweet Potato with a fork.  Four times should do the job.  If you don&#8217;t follow this step the Sweet Potato might explode in the microwave.</li>
<li>Place the sweet potatoes on a sheet of paper towels about 1 inch apart on the shelf of the microwave.</li>

<li>3 Large Sweet Potatoes, Scrubbed</li>
<li>Vegetable oil to rub the potatoes</li>
<li>1/4 cup of heavy cream</li>
<li>1/4 cup of chicken broth</li>
<li>1 teaspoon of bottled horseradish, drained</li>
<li>Salt &amp; Ground Black Pepper to Taste</li>
</ul>
<h4>Directions For Mashed Sweet Potatoes</h4>
<ol>
<li>Preheat Oven to 325F</li>
<li>Rub the skins of the sweet potatoes with the vegetable oil</li>
<li>Prick holes in the sweet potatoes with a fork (so they won&#8217;t explode)</li>
<li>Place the sweet potatoes on a cookie sheet; then place the cookie sheet on the lowest rack in the oven</li>
<li>Bake the sweet potatoes for 1 to 1 1/2 hours until they are easily pierced by a sharp knife</li>
<li>Test the sweet potatoes after one hour</li>
<li>When the sweet potatoes are finished cooking let them cool until you can easily handle them</li>
<li>Cut the potatoes into 1 to 2 inch cubes</li>
<li>Now squeeze the sweet potato cubes through your potato ricer to make lump free mashed sweet potatoes</li>
<li>In a one quart saucepan bring the cream and chicken broth to a boil; remove from heat</li>
<li>Using an electric mixer set to medium speed, slowly beat the cream mixture into the mashed sweet potatoes until they are smooth and fluffy</li>
<li>Beat in horseradish along with the salt &amp; pepper</li>
<li>Cover the mashed sweet potato mixture and set aside</li>
</ol>
<h4>Ingredients For Bell Pepper Casserole</h4>
<ul>
<li>1 small onion sliced very thin</li>
<li>1 small bell pepper sliced very thin</li>
<li>2 medium size russet potatoes sliced very thin</li>
<li>1 stick of butter</li>
<li>1/2 cup of sour cream</li>
<li>The mashed sweet potatoes you just made</li>
<li>1  cup of cheddar cheese, grated</li>
<li>4 medium size Russet potatoes, sliced and cooked</li>
<li>6 well cooked slices of bacon</li>
</ul>
<h4>Directions on Cooking The Bell Pepper Casserole</h4>
<ol>
<li>Preheat the oven to 350F</li>
<li>Spread the mashed sweet potatoes on the bottom of a casserole dish</li>
<li>Spread the sour cream on top of the mashed sweet potatoes</li>
<li>Now you will need to saute in the butter the onion and bell pepper slices</li>
<li>Place the sauteed onion slices and bell pepper slices over the sour cream&#8230;evenly</li>
<li>Drip some of the reserved butter onto the top of the sauteed slices. Don&#8217;t drown them.  Now evenly place the slices of the Russet potatoes on top.</li>
<li>Now evenly place the slices of the Russet Potatoes on top.</li>
<li>Place the casserole dish in the oven and let bake for 1 1/4 hours.</li>
<li>Now sprinkle the 1 cup of cheddar cheese on top.  Put back in oven (covered) for 15-20 minutes or until cheese is melted.</li>
<li> Remove from oven and sprinkle the cooked bacon on top</li>

<p>As an <span style="text-decoration: underline;">alternative fuel</span> the sweet potato is gathering steam to become the <strong>Biofuel</strong> of the future.  According to an article in Science Daily, the sweet potato is a <strong>Biofuel</strong> worth considering.</p>
<p>Sweet Potato Out-Yields <em>Corn</em> In <em>Ethanol</em> Production Study&#8211;Good News For <strong>Biofuel</strong><br />
In experiments, sweet potatoes grown in Maryland and Alabama yielded two to three times as much carbohydrate for <em>fuel ethanol production</em> as field corn grown in those states.</p>
<p>The sweet potato carbohydrate yields approached the lower limits of those produced by sugarcane, the highest-yielding <em>ethanol</em> crop. Another advantage for sweet potatoes and cassava is that they require much less fertilizer and pesticide than corn.   Just more good news for <strong>Biofuel</strong>.</p>
<p>The disadvantages to cassava and sweet potato are higher start-up costs, particularly because of increased labor at planting and harvesting times. If economical harvesting and processing techniques could be developed, the data suggests that sweet potato in Maryland and sweet potato and cassava in Alabama have greater potential than corn as ethanol sources.</p>
<p>Further studies are needed to get data on inputs of fertilizer, water, pesticides and estimates of energy efficiency. Overall, the data indicate it would be worthwhile to start pilot programs to study growing cassava and sweet potato for ethanol, especially on marginal lands.</p>
<p>The additional research could help develop new <strong>Biofuel</strong> sources without diverting field corn supplies from food and feed use to fuel.</p>
<p>As with everything else in this changing world, <strong>Bio Fuel</strong> is the wave of the future.  Sweet Potato <strong>Bio Fuels</strong> are an <em>alternative fuel</em>, a <em>green fuel</em>, that can&#8217;t be overlooked.</p>

<p>The USDA requires that when it is used to refer to sweet potatoes, the word “yam” must be accompanied by the words “sweet potatoes” on all labels and marketing materials.</p>
<p>Sweet potatoes are one of the most nutritious vegetables. Low in calories with no fat and no cholesterol, they contain antioxidants; vitamins C, B6, and E; iron; potassium; and beta-carotene. They’re also a great source of fiber. <strong>Canned Sweet Potatoes</strong> are also very nutritious but not so much as the non-canned.</p>

<li>Preheat oven to 325F</li>
<li>Rub the skins of the potatoes with the vegetable oil</li>
<li>Prick holes into the potatoes with a fork (so they won&#8217;t explode)</li>
<li>Place the potatoes on a cookie sheet; then place the cookie sheet on the lowest rack in the oven.</li>
<li>Bake the potatoes for 1 to 1 1/2 hours until they are easily pierced by a sharp knife.</li>
<li>Test the sweet potatoes after one hour</li>
<li>When the potatoes are finished cooking let them cool until you can easily handle them.</li>
<li>Cut all the potatoes lengthwise in half</li>
<li>Scoop the pulp from the white potatoes into a large bowl.</li>
<li>Mash the pulp <strong>briefly</strong>.</li>
<li>Now scoop the flesh from the sweet potatoes into the same bowl.</li>
<li>Set the bowl aside.</li>
<li>In a one quart saucepan bring the cream and chicken broth to a boil; remove from heat.</li>
<li>Use an electric mixer set to medium speed, slowly beat cream mixture into reserved potatoes until they are smooth and fluffy.</li>

<li>Try and pat all of the moisture off of the sweet potato slices (use a paper towel)</li>

<p>This homemade recipe is one that is authentic, delicious, and sure to be a crowd pleaser.</p>
<h3><em><span style="text-decoration: underline;">How To Make The Sweet Potato Casserole</span></em></h3>

<h4>Ingredients</h4>
<ul>
<li>3 cups cooked mashed sweet potatoes (4-5 medium potatoes)</li>
<li>3/4 to 1 cup white sugar</li>
<li>2 eggs beaten</li>
<li>1/2 teaspoon salt</li>
<li>1/2 cup butter (substitute margarine if you want)</li>
<li>1/2 cup raisins</li>
<li>1/3 cup milk</li>
<li>1 teaspoon vanilla</li>
</ul>
<h4>Topping Ingredients</h4>
<ul>
<li>3/4 cup light brown sugar</li>
<li>1/2 cup flour</li>
<li>1 cup chopped nuts (pecans)</li>
<li>1/3 cup softened butter (substitute margarine if you want)</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Microwave the sweet potatoes. Wrap each potato in clear plastic wrap and cook in microwave. 6 minutes per potato should be about right, but check to make sure they are cooked completely. Don&#8217;t poke a hole in them. Be careful when unwrapping the plastic&#8230;because of the hot steam</li>
<li>Remove the skin from the sweet potatoes. <strong><span style="text-decoration: underline;">Do Not</span> refrigerate the potatoes at this point.</strong> It will make them grainy.</li>
<li>Mash the sweet potatoes</li>
<li>Mix into the mashed sweet potatoes: the sugar, eggs, salt, butter, raisins, milk, and vanilla.</li>
<li>Pour the mixture into a 9&#215;9 baking dish</li>
<li>Now mix the topping ingredients together.</li>
<li>Spread the topping on the top of the potato mixture</li>
<li>Bake at 350 degrees for 25 minutes</li>
