<p>I consider any food dish that contains chiles a type of Mexican food.&#160; I’m sure plenty of people would disagree with me but that is how I think about it.&#160; So, this cheese and tomato casserole dish is kind of a Mexican dish to me.&#160; </p>
<h2><em><u>How To Make Two Cheese &amp; Tomato Casserole</u></em></h2>
<p><strong>Ingredients</strong></p>
<ul>
<li><font color="#111111">4 large eggs, separated</font> </li>
<li><font color="#111111">2/3 cup undiluted evaporated milk</font> </li>
<li><font color="#111111">1 tablespoon salt</font> </li>
<li><font color="#111111">1/2 teaspoon pepper</font> </li>
<li><font color="#111111">2 cups shredded Monterey Jack cheese</font> </li>
<li><font color="#111111">2 cups shredded Cheddar cheese</font> </li>
<li><font color="#111111">2 cans (4 oz each) diced green chiles or 2 poblano chiles, roasted, peeled, and diced</font> </li>
<li><font color="#111111">1 can ( 14.5 oz) stewed tomatoes with their juice, or 2 vine ripe tomatoes, peeled and diced</font> </li>
</ul>
<p><strong>Cooking Directions</strong></p>
<ol>
<li><font color="#111111">Preheat oven to 325F</font> </li>
<li><font color="#111111">Butter a deep 3 quart casserole or souffle dish</font> </li>
<li><font color="#111111">Beat the egg yolks in a large bowl with the milk and add the flour, salt, and pepper.</font> </li>
<li><font color="#111111">Beat the egg whites in a medium bowl until stiff and fold into the egg yolk mixture.</font> </li>
<li><font color="#111111">In the buttered casserole, mix the cheeses, green chiles, and tomatoes with their juice.&#160; Pour the egg mixture over and stir with a fork until just mixed.</font> </li>
<li><font color="#111111">Bake for 30-35 minutes, until set and lightly browned.</font> </li>
</ol>
<p>This vegetarian meatless recipe really does taste good.&#160; It is easy and fast to&#160; prepare.&#160; I don’t think you will be disappointed.&#160; It makes great leftovers and can be served for lunch or dinner.</p>

<li><font color="#111111">1 large onion, chopped</font> </li>
<li><font color="#111111">1 green bell pepper, seeded and chopped</font> </li>

<li><font color="#111111">3 cloves garlic, minced</font> </li>
<li><font color="#111111">2 cups water</font> </li>
<li><font color="#111111">1 can (14.5 oz) diced tomatoes with their juice</font> </li>

<li><font color="#111111">1 1/2 teaspoons dried thyme</font> </li>
<li><font color="#111111">1 teaspoon dried basil</font> </li>
<li><font color="#111111">1 teaspoon dried oregano</font> </li>
<li><font color="#111111">1/4 teaspoon red pepper flakes</font> </li>
<li><font color="#111111">1 cup brown rice</font> </li>
<li><font color="#111111">1 can (15 oz) butter beans, rinsed and drained</font> </li>
<li><font color="#111111">1 can (15 oz) small red beans, rinsed and drained</font> </li>

<p><strong>Cooking Directions</strong></p>

<li><font color="#111111">Preheat the oven to 350F</font> </li>
<li><font color="#111111">In a large nonstick skillet, heat the oil and add the onion, bell pepper, celery, and garlic.&#160; Sauté over medium-high heat until the vegetables are tender, 3-4 minutes.&#160; </font></li>
<li><font color="#111111">Add the water, tomatoes with their juice, tomato sauce, thyme, basil, oregano, pepper flakes, and rice.</font> </li>
<li><font color="#111111">Transfer to a 2 1/2 quart casserole and stir.</font> </li>
<li><font color="#111111">Cover and bake for 30 to 35 minutes, or until the rice has absorbed the liquid.&#160; Stir in the butter beans and red beans and return to the oven, covered, for another 15 minutes, or until heated through.</font> </li>

<li>2 pounds red potatoes, peeled and diced </li>
<li>2 cups (8 ounces) shredded cheddar cheese </li>

<p><strong>The combination of tastes that occur in the <em>Green Pepper Casserole</em> with Sliced Russet potatoes will be a culinary experience you will not soon forget.</strong> </p>

<li>2 Green Peppers sliced, no more than 1/2 inch thick</li>
<li>2 Large Russet Potatoes Sliced, thin</li>
<li>2 Large Tomatoes Sliced, no more than 1/4 inch thick</li>
<li>1/4 cup of olive oil</li>
<li>2 teaspoons of garlic, minced</li>
<li>Salt &amp; Pepper to taste</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Preheat oven to 375F</li>
<li>Spread 1 tablespoon of the olive oil on the bottom of your casserole pan. A 2 quart casserole pan would be ideal.</li>
<li>Place half of the sliced potatoes on the bottom of the casserole pan. It is ok to overlap the sliced potatoes.</li>
<li>Now top the potatoes with enough sliced peppers to cover the lower layer.</li>
<li>Cover the sliced peppers with enough sliced tomatoes to cover</li>
<li>Drizzle with one tablespoon of the olive oil</li>
<li>Sprinkle the layer with one teaspoon of garlic and about 1/4 teaspoon of salt &amp; pepper</li>
<li>Repeat with another layer using steps 3-7</li>
<li>Bake 30 minutes uncovered, then 30 minutes covered. Check to see if the potatoes are tender. If not bake another 10-15 minutes.</li>

<li>3 Large Sweet Potatoes, Scrubbed</li>
<li>Vegetable oil to rub the potatoes</li>
<li>1/4 cup of heavy cream</li>
<li>1/4 cup of chicken broth</li>
<li>1 teaspoon of bottled horseradish, drained</li>
<li>Salt &amp; Ground Black Pepper to Taste</li>
</ul>
<h4>Directions For Mashed Sweet Potatoes</h4>
<ol>
<li>Preheat Oven to 325F</li>
<li>Rub the skins of the sweet potatoes with the vegetable oil</li>
<li>Prick holes in the sweet potatoes with a fork (so they won&#8217;t explode)</li>
<li>Place the sweet potatoes on a cookie sheet; then place the cookie sheet on the lowest rack in the oven</li>
<li>Bake the sweet potatoes for 1 to 1 1/2 hours until they are easily pierced by a sharp knife</li>
<li>Test the sweet potatoes after one hour</li>
<li>When the sweet potatoes are finished cooking let them cool until you can easily handle them</li>
<li>Cut the potatoes into 1 to 2 inch cubes</li>
<li>Now squeeze the sweet potato cubes through your potato ricer to make lump free mashed sweet potatoes</li>
<li>In a one quart saucepan bring the cream and chicken broth to a boil; remove from heat</li>
<li>Using an electric mixer set to medium speed, slowly beat the cream mixture into the mashed sweet potatoes until they are smooth and fluffy</li>
<li>Beat in horseradish along with the salt &amp; pepper</li>
<li>Cover the mashed sweet potato mixture and set aside</li>
</ol>
<h4>Ingredients For Bell Pepper Casserole</h4>
<ul>
<li>1 small onion sliced very thin</li>
<li>1 small bell pepper sliced very thin</li>
<li>2 medium size russet potatoes sliced very thin</li>
<li>1 stick of butter</li>
<li>1/2 cup of sour cream</li>
<li>The mashed sweet potatoes you just made</li>
<li>1  cup of cheddar cheese, grated</li>
<li>4 medium size Russet potatoes, sliced and cooked</li>
<li>6 well cooked slices of bacon</li>
</ul>
<h4>Directions on Cooking The Bell Pepper Casserole</h4>
<ol>
<li>Preheat the oven to 350F</li>
<li>Spread the mashed sweet potatoes on the bottom of a casserole dish</li>
<li>Spread the sour cream on top of the mashed sweet potatoes</li>
<li>Now you will need to saute in the butter the onion and bell pepper slices</li>
<li>Place the sauteed onion slices and bell pepper slices over the sour cream&#8230;evenly</li>
<li>Drip some of the reserved butter onto the top of the sauteed slices. Don&#8217;t drown them.  Now evenly place the slices of the Russet potatoes on top.</li>
<li>Now evenly place the slices of the Russet Potatoes on top.</li>
<li>Place the casserole dish in the oven and let bake for 1 1/4 hours.</li>
<li>Now sprinkle the 1 cup of cheddar cheese on top.  Put back in oven (covered) for 15-20 minutes or until cheese is melted.</li>
<li> Remove from oven and sprinkle the cooked bacon on top</li>
</ol>

<li>3 cups cooked mashed sweet potatoes (4-5 medium potatoes)</li>
<li>3/4 to 1 cup white sugar</li>
<li>2 eggs beaten</li>
<li>1/2 teaspoon salt</li>
<li>1/2 cup butter (substitute margarine if you want)</li>
<li>1/2 cup raisins</li>
<li>1/3 cup milk</li>
<li>1 teaspoon vanilla</li>
</ul>

<li>3/4 cup light brown sugar</li>
<li>1/2 cup flour</li>
<li>1 cup chopped nuts (pecans)</li>
<li>1/3 cup softened butter (substitute margarine if you want)</li>

<h4>Directions</h4>

<li>Microwave the sweet potatoes. Wrap each potato in clear plastic wrap and cook in microwave. 6 minutes per potato should be about right, but check to make sure they are cooked completely. Don&#8217;t poke a hole in them. Be careful when unwrapping the plastic&#8230;because of the hot steam</li>
<li>Remove the skin from the sweet potatoes. <strong><span style="text-decoration: underline;">Do Not</span> refrigerate the potatoes at this point.</strong> It will make them grainy.</li>
<li>Mash the sweet potatoes</li>
<li>Mix into the mashed sweet potatoes: the sugar, eggs, salt, butter, raisins, milk, and vanilla.</li>
<li>Pour the mixture into a 9&#215;9 baking dish</li>
<li>Now mix the topping ingredients together.</li>
<li>Spread the topping on the top of the potato mixture</li>
<li>Bake at 350 degrees for 25 minutes</li>
