<p>I think my obsession started with my mother&#8217;s delicious <strong>Creamy Potato Salad Recipe</strong>.  I just loved it.  I would fill myself up with the <em>creamy potato salad</em> and leave all the other food.  Of course this didn&#8217;t make my mother too happy, but secretly I think she was proud of herself for knowing <em>how to make potato salad</em> that was simply scrumptious.</p>
<p>This recipe is not my mom&#8217;s original <em>creamy potato salad recipe</em>.  It is close to it but not exactly the same.   This <em>new potato salad recipe</em> contains mayonnaise and bacon like my mom&#8217;s <em>creamy potato salad</em>, but it uses <em>red potatoes</em> where my mother used Russets. </p>
<p>Despite this <em>creamy potato salad recipe</em> not being an exact duplicate of my mother&#8217;s recipe, it is still a <em>quick, easy, and one of the best creamy potato salad recipes</em> I have ever tasted.</p>

<li>6 Hard Boiled Eggs, Chopped</li>
<li>1 Pound Of Bacon</li>
<li>1 White Onion Chopped</li>
<li>2 Cups Of Mayonnaise</li>
<li>1 Cup Of Sour Cream</li>
<li>3 Tablespoons Of Milk</li>
<li>2 Large Tomatoes Chopped</li>
<li>2 Cups Cheddar Cheese, Shredded</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Wash and scrub the potatoes</li>
<li>Cut the potatoes into approximately 1 inch cubes</li>
<li>Boil the potatoes. Don&#8217;t over cook you are not going to make mashed potatoes</li>
<li>After the potatoes are cooked, set them aside and let them cool.</li>
<li>As the potatoes are cooling, cook the chopped onion and bacon together. When the bacon is crispy, drain the drippings and reserve them.</li>
<li>Now combine the milk, bacon drippings, sour cream, and mayonnaise in a bowl and mix together.</li>
<li>In a large bowl mix together the eggs, the onion-bacon mixture, and the cooked potatoes.</li>
<li>Combine the ingredients of the small bowl with the bowl containing the potatoes and toss.</li>
<li>Place in the fridge for 2-3 hours or until chilled. Sprinkle the cheese and tomatoes on top before serving.</li>

<li>1 cup of mayonnaise</li>
<li>1/4 cup deli mustard</li>
<li>1 large Vidalia onion chopped</li>
<li>1 small jar of sweet Gherkin pickles, chopped</li>
<li>2 teaspoons of sweet Gherkin pickle juice</li>
<li>1 small jar of pimentos, drained and chopped</li>
<li>16 ounces cheddar cheese, grated</li>
<li>Salt &amp; Pepper to taste</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Place the potatoes in a large pot. Cover with water and boil until the potatoes are fork tender. Drain the water and then place the potatoes in a large bowl or pot of ice water. You do this to &#8220;shock&#8221; the potatoes and to stop the cooking process.</li>
<li>Chop the hard boiled eggs</li>
<li>Mix together the cream cheese, mayonnaise, sour cream, deli mustard, and salt &amp; pepper to taste. Now add the grated cheese, pimentos, pickle juice, chopped pickles, and the chopped Vidalia onion.</li>
<li>Peel and cube the cooled potatoes. Carefully add the potatoes into the mixture. Remember we are not after mashed potatoes. Toss to combine.</li>

<p>The <em>red potato </em>has always held a special place on the meal menu.  If you go to any buffet, anywhere:  Las Vegas to Paris, the <em>red potato</em> will be proudly displayed with all of the other <em>potato salads</em>.</p>
<h3><em><span style="text-decoration: underline;">How To Make The Red Potato Salad Recipe</span></em></h3>

<li>3 pounds of red potatoes</li>
<li>2 celery sticks, chopped fine</li>
<li>2 carrots, chopped</li>
<li>1 cucumber, chopped</li>
<li>2 tablespoons white vinegar</li>
<li>1/2 cup milk</li>
<li>1 cup mayonnaise</li>
<li>1 small onion, diced</li>
<li>2 teaspoons salt</li>
<li>1 teaspoon sugar</li>
<li>1/4 teaspoon black pepper</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Scrub the potatoes</li>
<li>Place the potatoes in a large pot (don&#8217;t peel the potatoes)</li>
<li>Cover with water, cover the pan and bring to a boil</li>
<li>Cook for about 20-25 minutes or until the potatoes are fork tender (don&#8217;t let the potatoes get too soft&#8230;..we are not making mashed potatoes)</li>
<li>Drain the water and let the potatoes cool a bit</li>
<li>Cut the potatoes into one inch chunks</li>
<li>In a large bowl mix the celery, carrots, cucumber, vinegar, milk, mayonnaise, onion, salt, sugar and pepper</li>
<li>Gently stir the cooked potatoes being careful not to mash them</li>
<li>Make sure everything is blended well</li>
<li>Place in fridge until time to serve</li>

<li>3 cups cooked mashed sweet potatoes (4-5 medium potatoes)</li>
<li>3/4 to 1 cup white sugar</li>
<li>2 eggs beaten</li>
<li>1/2 teaspoon salt</li>
<li>1/2 cup butter (substitute margarine if you want)</li>
<li>1/2 cup raisins</li>
<li>1/3 cup milk</li>
<li>1 teaspoon vanilla</li>
</ul>
<h4>Topping Ingredients</h4>
<ul>
<li>3/4 cup light brown sugar</li>
<li>1/2 cup flour</li>
<li>1 cup chopped nuts (pecans)</li>
<li>1/3 cup softened butter (substitute margarine if you want)</li>

<h4>Directions</h4>
<ol>
<li>Microwave the sweet potatoes. Wrap each potato in clear plastic wrap and cook in microwave. 6 minutes per potato should be about right, but check to make sure they are cooked completely. Don&#8217;t poke a hole in them. Be careful when unwrapping the plastic&#8230;because of the hot steam</li>
<li>Remove the skin from the sweet potatoes. <strong><span style="text-decoration: underline;">Do Not</span> refrigerate the potatoes at this point.</strong> It will make them grainy.</li>
<li>Mash the sweet potatoes</li>
<li>Mix into the mashed sweet potatoes: the sugar, eggs, salt, butter, raisins, milk, and vanilla.</li>
<li>Pour the mixture into a 9&#215;9 baking dish</li>
<li>Now mix the topping ingredients together.</li>
<li>Spread the topping on the top of the potato mixture</li>
<li>Bake at 350 degrees for 25 minutes</li>
