Sweet Potato Pie was made popular in the south. As people from the south moved to the north, they brought every conceivable Sweet Potato Pie Recipe with them. Today sweet potato pie is a dish served on a regular basis all over the United Sates. During the holiday season, Thanksgiving and Christmas, sweet potato pie is a mainstay.

This recipe for Supreme Sweet Potato Pie is jaw dropping good. If you never have eaten sweet potato pie then you are in for a treat.

How To Make Sweet Potato Pie

Ingredients

1 pound sweet potatoes (or 17.2 oz can of sweet potatoes) If you opt to use the canned potatoes, drain, place the potatoes in a bowl with softened butter, mix with electric mixer until lump free.

1/4 to 1/2 cup butter (depends how rich you want it)

1/2 cup white sugar

1/2 cup brown sugar

1/2 cup evaporated milk

2 eggs

1/4 teaspoon ground nutmeg

1/2 teaspoon ground cinnamon

1 teaspoon vanilla extract

1/4 teaspoon ginger

2 tablespoons lemon juice

2 tablespoons flour

1 (9 inch) unbaked pie crust

Directions

Microwave the sweet potatoes. Wrap each potato in clear plastic wrap and cook in microwave. 6 minutes per potato should be about right, but check to make sure they are cooked completely. Don’t poke a hole in them. Be careful when unwrapping the plastic…because of the hot steam

Remove the skin from the sweet potatoes. Do Not refrigerate the potatoes at this point. It will make them grainy.

If you have a blender use it for this step. If you don’t have a blender then you can use a mixer. Place the cooked and peeled sweet potatoes in a bowl (blender) with softened butter and mix till smooth.

Now place the rest of the ingredients in the bowl and mix till evenly distributed.

Pour the mixture into the pie shell.

Bake 60-90 minutes at 350 degrees, or until a knife stuck in the center comes out clean.

The Supreme Sweet Potato Pie can be served warm or cold.

According to essortment there are more than 5,000 varieties of potatoes in the world. In the United States, the most common variety includes the Red Potato.

Round, red potatoes belong to the red family of potatoes and include the Red Lasoda and Red Pontiac varieties. Red potatoes have smooth, thin skins and white insides. This type of potato is firm and most easily used in casseroles, soups, salads, or boiled, steamed and roasted.

Red potatoes make a delicious addition to many recipes. These thin skinned vegetables are often easier to peel than white potatoes, and make an attractive, colorful dish. Red potatoes can easily be spiced up with any dried herb or sauteed in your favorite oils and dressings.

The Microwave Baked Potato Recipe is simple, easy, and fast. If you are in a hurry or can’t wait to eat your spud, then this is the way to go.

Back in the days before there was such a thing as a microwave baked potato, you had to actually sit around for hours, days, weeks, waiting for that darn potato to cook fully through. But now thanks to the advances in kitchen technology….you’ll be eating your baked potato in a matter of mere minutes!!

How To Make The Microwave Baked Potato Recipe

Ingredients

1 medium sized potato

2-3 tablespoons of water

A bowl (see how simple this is)

Microwave Oven (Just in case you couldn’t figure it out by yourself)

Directions

Scrub the potato clean (Go to Wal-Mart, spend $1.00 on a brush and use it)

With a fork puncture some holes in the potato so that it won’t explode while cooking.

Place the potato in a bowl containing 2-3 tablespoons of water

Place the bowl containing the water and potato into the microwave and cook on high for 4 minutes.

Turn the potato over. (I know this is complicated…try to follow along)

Cook on high for another 4-5minutes

Poke the potato with a fork. If the fork goes through easy then it should be ready.

If you are going to use a “large” potato then the cooking time will probably be more like 5-6 minutes on each side. If you are unsure about the time just keep testing the potato with the fork until it goes through easy.

Now you know how to bake a potato in a microwave oven.

How To Make Baked Potato Casserole Recipe

Ingredients

4 to 5 large potatoes, bake them and then let them cool.

2 cups white sauce (or replace with mushroom soup)

1 package of mushrooms or 2 cans

1 small onion chopped in medium dice

1/2 cup cheddar cheese

1 cup sour cream

5 slices bacon, fried crisp, drained and torn into small pieces

dash of nutmeg

salt and pepper to taste

Directions

First saute the diced onions in butter until they are translucent. Set aside

In the same pan you need to saute the mushrooms until most of the moisture evaporates

Next, return the onions to the pan, along with everything else except the bacon, potatoes and cheese

Heat until “just” warm

Now….peel and slice the potatoes. In a buttered casserole dish put in a layer of potatoes, layer of sauce, sprinkle of bacon and so on. End the layering with sauce and cheese sprinkled on top.

Heat in microwave for about 12 minutes (remember the potatoes are already cooked) Or you could throw it in the oven (uncovered) for about 1/2 hour at 350 degrees

This dish is one of those that you can make ahead. When you get to grandma’s house just pop it in the micro or oven to warm up and there you go!!
