<li>1/2 lb of thick sliced bacon</li>
<li>2 medium onions, chopped</li>
<li>10 medium (not large) potatoes, cut into 1 inch cubes</li>
<li>4 cups of chicken stock</li>
<li>1 pint of half and half</li>
<li>Salt &amp; Pepper for taste</li>
<li>3-4 sprigs of thyme</li>
<li>2 bay leaves</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Peel the potatoes and chop into one inch cubes</li>
<li>Place potato cubes into a large bowl of water and quickly add a few squirts of lemon juice to the water. This will prevent the potatoes from turning brown.</li>
<li>Cook the bacon until crisp. Then dice up the bacon.</li>
<li>Remove the bacon from the pan but leave the fat in the pan.</li>
<li>Add the chopped onions to the bacon fat in the pan and heat the onions until they become translucent.</li>
<li>Take all of the ingredients except for the half and half and bacon and put in the <strong>Crock Pot</strong>.</li>
<li>Cook on low for 10-12 hours</li>
<li>After 10-12 hours add the half and half to the mixture and stir it in real good. There is no need (don&#8217;t do it) to cook the half and half.</li>
<li>At this point decide if you would like the potatoes in cube form in your soup or you would like creamy potatoes in your soup. If you would like creamy potatoes get out the masher and go to work.</li>
<li>Ladle the soup out into soup cups and sprinkle the cooked bacon bits on top.</li>

<p><strong>Vegetarian:</strong>  Somebody who does not eat red meat at all.  Some vegetarians will eat chicken and fish.  Vegetarians have no problem drinking milk, eating sour cream, or digesting any other food that comes from animals.  They just shy away from eating the animal.</p>
<p><strong>Vegans:</strong> Vegans don&#8217;t eat any meat. They don&#8217;t eat chicken or fish. If it breathes they don&#8217;t eat it. They also don&#8217;t eat any food items that come from animals. No sour cream, no butter, and no milk. Vegans substitute animal food items with other more natural choices.</p>
<p>My experiment into becoming a vegetarian did not last long.  I love hamburgers and steaks.  I also like sour cream better than tofu!  But once I learned <a href="www.potatopatchrecipes.com/2009/02/how-to-make-a-baked-potato/">how to make a baked potato</a> I fell in love with all types of potato recipes.</p>

<p>In today&#8217;s hectic world with everybody being so busy, having the skills of a quick gourmet is priceless.   Nobody wants to work in the kitchen all day.  If you want to do that you should go to a cooking school.  Most people I know, me included, want what we are cooking quick to be a foolproof  crock pot meal.  Or at least a good side dish recipe.</p>

<li>1/2 teaspoon ground black pepper</li>

<li>1/3 cup all purpose flour</li>
<li>1 teaspoon Worcestershire sauce (2 teaspoons if you like)</li>
<li>3 cups of beef broth</li>
<li>1/2 onion chopped</li>
<li>3 red potatoes, scrubbed and diced (no need to peel)</li>
<li>4 carrots chopped</li>
<li>7 ounces of diced tomatoes</li>
</ul>
<p>This is a shake and cook recipe. So you are going to need a large food storage bag to continue!!</p>
<h3>Directions</h3>
<ol>
<li>Get your large food storage back out. Put in the salt, pepper, and flour</li>
<li>Add the beef and do the beef stew shake with the bag. Really go at it until the beef is entirely coated. I told you this was an old fashion recipe. Remember the commercial?</li>
<li>Now place the contents of the bag in the crock pot (make sure to add all of the remaining flour that is in the bag)</li>
<li>Now it is time to add the diced potatoes, chopped carrots, beef broth, onion, Worcestershire sauce, bay leaves and garlic. Make sure to stir as you add the ingredients. Don&#8217;t add the tomatoes yet!!!</li>
<li>You can cook the beef stew two way in your slow cooker. 10-12 hours on low&#8230;.Or 4-6 hours on high. I prefer the 10-12 hours on low.</li>
<li>One hour before your homemade, made from scratch, easy beef stew is finished cooking, stir in the tomatoes.</li>

<li>2 pounds of very lean ground beef</li>
<li>1 pound of pork sausage</li>
<li>1/4 cup milk</li>
<li>2 eggs</li>
<li>2 slices of white bread</li>
<li>1 small onion (about 1/2 cup) finely chopped or grated</li>
<li>1/4 teaspoon of salt</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Grate the onion into a large mixing bowl.</li>
<li>Soak the bread thoroughly in the milk. Then tear the bread into small pieces as you add it into the mixing bowl along with the milk.</li>
<li>Now add the eggs and beat the entire mixture until smooth.</li>
<li>Mix together the ground beef and the pork sausage.</li>
<li>Now add the meat combination to the mixing bowl with the rest of the ingredients and mix until well combined.</li>
<li>Form the entire mixture into a round form about 4 inches high.</li>
<li>Place in the Crock Pot and cook the meatloaf on high for 3-4 hours.</li>
<li>About 2 hours into the cooking drain out the melted fat.</li>
<li>When finished cooking drain the melted fat once again.</li>

<li>2 teaspoons of garlic, minced</li>
<li>Salt &amp; Pepper to taste</li>

<h4>Directions</h4>
<ol>
<li>Preheat oven to 375F</li>
<li>Spread 1 tablespoon of the olive oil on the bottom of your casserole pan. A 2 quart casserole pan would be ideal.</li>
<li>Place half of the sliced potatoes on the bottom of the casserole pan. It is ok to overlap the sliced potatoes.</li>
<li>Now top the potatoes with enough sliced peppers to cover the lower layer.</li>
<li>Cover the sliced peppers with enough sliced tomatoes to cover</li>
<li>Drizzle with one tablespoon of the olive oil</li>
<li>Sprinkle the layer with one teaspoon of garlic and about 1/4 teaspoon of salt &amp; pepper</li>
<li>Repeat with another layer using steps 3-7</li>
<li>Bake 30 minutes uncovered, then 30 minutes covered. Check to see if the potatoes are tender. If not bake another 10-15 minutes.</li>

<li>Vegetable oil to rub the potatoes</li>
<li>1/4 cup of heavy cream</li>
<li>1/4 cup of chicken broth</li>
<li>1 teaspoon of bottled horseradish, drained</li>
<li>Salt &amp; Ground Black Pepper to Taste</li>
</ul>
<h4>Directions For Mashed Sweet Potatoes</h4>
<ol>
<li>Preheat Oven to 325F</li>
<li>Rub the skins of the sweet potatoes with the vegetable oil</li>
<li>Prick holes in the sweet potatoes with a fork (so they won&#8217;t explode)</li>
<li>Place the sweet potatoes on a cookie sheet; then place the cookie sheet on the lowest rack in the oven</li>
<li>Bake the sweet potatoes for 1 to 1 1/2 hours until they are easily pierced by a sharp knife</li>
<li>Test the sweet potatoes after one hour</li>
<li>When the sweet potatoes are finished cooking let them cool until you can easily handle them</li>
<li>Cut the potatoes into 1 to 2 inch cubes</li>
<li>Now squeeze the sweet potato cubes through your potato ricer to make lump free mashed sweet potatoes</li>
<li>In a one quart saucepan bring the cream and chicken broth to a boil; remove from heat</li>
<li>Using an electric mixer set to medium speed, slowly beat the cream mixture into the mashed sweet potatoes until they are smooth and fluffy</li>
<li>Beat in horseradish along with the salt &amp; pepper</li>
<li>Cover the mashed sweet potato mixture and set aside</li>
</ol>
<h4>Ingredients For Bell Pepper Casserole</h4>
<ul>
<li>1 small onion sliced very thin</li>
<li>1 small bell pepper sliced very thin</li>
<li>2 medium size russet potatoes sliced very thin</li>
<li>1 stick of butter</li>
<li>1/2 cup of sour cream</li>
<li>The mashed sweet potatoes you just made</li>
<li>1  cup of cheddar cheese, grated</li>
<li>4 medium size Russet potatoes, sliced and cooked</li>
<li>6 well cooked slices of bacon</li>
</ul>
<h4>Directions on Cooking The Bell Pepper Casserole</h4>
<ol>
<li>Preheat the oven to 350F</li>
<li>Spread the mashed sweet potatoes on the bottom of a casserole dish</li>
<li>Spread the sour cream on top of the mashed sweet potatoes</li>
<li>Now you will need to saute in the butter the onion and bell pepper slices</li>
<li>Place the sauteed onion slices and bell pepper slices over the sour cream&#8230;evenly</li>
<li>Drip some of the reserved butter onto the top of the sauteed slices. Don&#8217;t drown them.  Now evenly place the slices of the Russet potatoes on top.</li>
<li>Now evenly place the slices of the Russet Potatoes on top.</li>
<li>Place the casserole dish in the oven and let bake for 1 1/4 hours.</li>
<li>Now sprinkle the 1 cup of cheddar cheese on top.  Put back in oven (covered) for 15-20 minutes or until cheese is melted.</li>
<li> Remove from oven and sprinkle the cooked bacon on top</li>
</ol>

<li>The white part of one leek, julienned</li>
<li>1 cup dry white wine</li>
<li>2 1/2 cups of vegetable consomme</li>
<li>Pepper to taste</li>

<li>Peel the potatoes and dice them into 1/2 inch cubes</li>
<li>Transfer the potato into a crock pot</li>
<li>Add the consomme, wine, leek, celery, carrot, onion, garlic, and pepper</li>
<li>If the potatoes are not covered with liquid add water</li>
<li>Cover the crock pot and cook on high for 1/2 hour</li>
<li>Now cook on medium for 1/2 hour (you want the potatoes to become tender)</li>
<li>Adjust cooking time to make sure potatoes are fully cooked</li>
<li>If too much of the liquid evaporates during cooking you can add water or more consomme</li>
<li>Serve the potato stew while it piping hot</li>

<li>2 celery sticks, chopped fine</li>
<li>2 carrots, chopped</li>
<li>1 cucumber, chopped</li>

<li>1 cup mayonnaise</li>
<li>1 small onion, diced</li>
<li>2 teaspoons salt</li>
<li>1 teaspoon sugar</li>
<li>1/4 teaspoon black pepper</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Scrub the potatoes</li>
<li>Place the potatoes in a large pot (don&#8217;t peel the potatoes)</li>
<li>Cover with water, cover the pan and bring to a boil</li>
<li>Cook for about 20-25 minutes or until the potatoes are fork tender (don&#8217;t let the potatoes get too soft&#8230;..we are not making mashed potatoes)</li>
<li>Drain the water and let the potatoes cool a bit</li>
<li>Cut the potatoes into one inch chunks</li>
<li>In a large bowl mix the celery, carrots, cucumber, vinegar, milk, mayonnaise, onion, salt, sugar and pepper</li>
<li>Gently stir the cooked potatoes being careful not to mash them</li>

<p>Russet potatoes have a high starch content with low moisture.<br />
These potatoes bake mealy and fluffy, and are the best choice for <em>mashed potatoes</em> and baked <em>potatoes</em>.<br />
Medium starch potatoes include <em>Yukon Gold</em> and <em>Yellow Finn potatoes</em>. They aren&#8217;t as fluffy as russet potatoes, but have great flavor. Yukon Gold potatoes, especially, taste buttery when cooked.<br />
Potatoes with a low starch content and high moisture include red and white potatoes. These potatoes are most often boiled or roasted and used in potato salad because of their creamy texture. They hold together well after being cooked.</p>
<h4><em><span style="text-decoration: underline;">Sweet Potatoes and Yams</span></em></h4>
<p><em>Sweet Potatoes</em> and <em>Yams</em> are actually two different tubers. Yams are a member of the lily family, and sweet potatoes are members of the morning glory family. In the United States, you&#8217;re almost always buying sweet potatoes; true yams are not very available. There are moist fleshed sweet potatoes and dry-fleshed potatoes. Both have lots of beta-carotene and potassium. They can be baked like russet potatoes, made into fries, or mashed. Sweet potato pie is another favorite recipe made from these tubers.<br />
For the best baked potatoes, long slow cooking is best. The skin becomes very crisp and turns darker because the starch just below the skin converts to sugar, which browns in heat. Make sure you cut a slit in the potato as soon as it comes out of the oven so the interior doesn&#8217;t steam, which makes a heavier consistency.</p>
<h4><em><span style="text-decoration: underline;">Twice Baked Potatoes</span></em></h4>
<p><em>Twice baked potatoes</em> are easy; they just  require a little time. Bake the potato until tender, about an hour, then remove the flesh from the skins. Return the skins to the oven to keep them crisp while you make the filling. Then add the filling ingredients &#8211; cream, butter, cheese, seasonings &#8211; whatever you like; beat the filling, then refill the potato skins. Bake until the potatoes are beginning to brown and crisp.</p>
<h4><em><span style="text-decoration: underline;">Mashed Potatoes</span></em></h4>
<p><em>Mashed potatoes</em> can be made from russets that are boiled or roasted. I myself prefer roasted, because I think it intensifies the potato flavor. The starch in the potatoes, once again, absorbs water and swells during the cooking process. Then when the potato is mashed or riced, the cells break open, releasing more starch, which makes the potatoes creamy and smooth. If you boil your potatoes for mashing, return them to the hot pan after draining and shake over medium heat for 2-3 minutes to dry the potatoes. Whatever the cooking method, add butter first when you begin mashing. That coats the cells and the starch so they absorb less liquid, making the potatoes less gluey and fluffier. For the actual mashing process, I prefer a <span style="text-decoration: underline;">potato ricer</span> because it makes the smoothest mashed potatoes. Cook&#8217;s Illustrated also prefers a ricer because it causes less damage to the cells.</p>
<h4><em><span style="text-decoration: underline;">French Fries</span></em></h4>
<p><em>French fried</em> potatoes are a bit more difficult to make at home. Frying them twice gives the best results. The potatoes must be dry when they are fried, or the starch will absorb the water on the surface and won&#8217;t seal the potatoes so they will absorb grease. Greasy <span style="text-decoration: underline;">french fries</span> are NOT desirable! Cut your fries from russet potatoes and place in a bowl of ice water as you work. This helps prevent the potatoes from changing color. Heat oil or vegetable shortening to 325 degrees. Dry the potatoes thoroughly in some paper towels. Cook the potatoes for 6-8 minutes until they become limp and just begin to change color. Remove from the fryer and let stand for 10 minutes. When you want to serve the fries, heat the oil to 350 degrees. Add the precooked potatoes and cook about 1-2 minutes until fries become golden brown and slightly puffy. Remove from the oil, salt, and serve! And here&#8217;s a tip if you like to bake french fries: chill the potatoes in the refrigerator overnight the day before you want to make them. This changes some of the starches to sugar, which then makes the potatoes more brown, even in the lower, more indirect heat of the oven.</p>
<h4><em><span style="text-decoration: underline;">Hash Brown Potatoes</span></em></h4>
<p><em>Hash brown potatoes</em> are easy to make from scratch. Make sure you grate the potatoes just before cooking them, or else they will change color, turning pink or brown. This happens because the sugars in the potatoes oxidize, causing the color change. Russet or high starch potatoes are the best for hash browns. Grate them in a food processor or on a hand grater and dry thoroughly by squeezing in a kitchen towel. Season them to taste and cook in butter and olive oil, pressing the potatoes with a spatula as they cook. When golden brown on the underside, flip the potatoes and cook until dark golden brown.</p>
<h4><em><span style="text-decoration: underline;">Roasted Potatoes</span></em></h4>
<p><em>Roasted potatoes</em> are simply cut into chunks and tossed with olive oil and seasonings, then baked at a high temperature, stirring once during cooking. I like to leave the skins on my roasted potatoes, but you can peel them if you like. These potatoes cook more like french fries, with the starch on the surface sealing the potatoes, making a crispy crust (even on cut sides) and a moist, tender interior. Bake potatoes at 400 degrees for 40-60 minutes until they are as brown and crispy as you like.</p>
<h4><em><span style="text-decoration: underline;">Scalloped Potatoes</span></em></h4>
<p><em>Scalloped potatoes</em> can be made with russets or low starch red potatoes. Russets will be more tender, and red potatoes will be firmer; the choice is yours! Slice potatoes 1/8&#8243; thick for the best texture and most even cooking, and try to get the slices the same thickness so they cook at the same time. Potatoes can be cooked in cream (see Potatoes Grand Mere) or in a thin white sauce, or for the easiest sauce of all, thinned condensed cream of mushroom soup.</p>

<li>1 teaspoon chili powder, use cayenne if you like it hot</li>

<h4>Glaze</h4>

<li>1/2 cup honey</li>
<li>1/4 cup fresh lime juice</li>
<li>1/4 teaspoon ground cinnamon</li>
