<p>I consider any food dish that contains chiles a type of Mexican food.&#160; I’m sure plenty of people would disagree with me but that is how I think about it.&#160; So, this cheese and tomato casserole dish is kind of a Mexican dish to me.&#160; </p>
<h2><em><u>How To Make Two Cheese &amp; Tomato Casserole</u></em></h2>
<p><strong>Ingredients</strong></p>
<ul>
<li><font color="#111111">4 large eggs, separated</font> </li>
<li><font color="#111111">2/3 cup undiluted evaporated milk</font> </li>
<li><font color="#111111">1 tablespoon salt</font> </li>
<li><font color="#111111">1/2 teaspoon pepper</font> </li>
<li><font color="#111111">2 cups shredded Monterey Jack cheese</font> </li>
<li><font color="#111111">2 cups shredded Cheddar cheese</font> </li>
<li><font color="#111111">2 cans (4 oz each) diced green chiles or 2 poblano chiles, roasted, peeled, and diced</font> </li>
<li><font color="#111111">1 can ( 14.5 oz) stewed tomatoes with their juice, or 2 vine ripe tomatoes, peeled and diced</font> </li>
</ul>
<p><strong>Cooking Directions</strong></p>
<ol>
<li><font color="#111111">Preheat oven to 325F</font> </li>
<li><font color="#111111">Butter a deep 3 quart casserole or souffle dish</font> </li>
<li><font color="#111111">Beat the egg yolks in a large bowl with the milk and add the flour, salt, and pepper.</font> </li>
<li><font color="#111111">Beat the egg whites in a medium bowl until stiff and fold into the egg yolk mixture.</font> </li>
<li><font color="#111111">In the buttered casserole, mix the cheeses, green chiles, and tomatoes with their juice.&#160; Pour the egg mixture over and stir with a fork until just mixed.</font> </li>
<li><font color="#111111">Bake for 30-35 minutes, until set and lightly browned.</font> </li>
</ol>
<p>This vegetarian meatless recipe really does taste good.&#160; It is easy and fast to&#160; prepare.&#160; I don’t think you will be disappointed.&#160; It makes great leftovers and can be served for lunch or dinner.</p>

<li>Melt the butter in a large pot over a medium heat</li>
<li>Saute the onion in the butter, about 10 minutes</li>
<li>Stir in the jalapeno peppers and thyme, let cook for about a minute</li>

<li>Let the mixture simmer for 45 minutes&#8211;make sure the veggies get tender</li>
<li>Remove the vegetables and potatoes, place in a food processor</li>

<li>You can do this a bit at a time in a blender if you don&#8217;t have a food processor</li>
<li>Return everything to the pot</li>
<li>Stir in the milk, cream, brown sugar, and salt</li>
<li>If the soup is too thick add a little more milk or broth&#8230;your choice</li>
<li>Heat the soup on a low heat for 15 minutes</li>

<li>4 large white skin potatoes</li>
<li>1/2 cup <a title="salsa verde" href="http://www.texmextogo.com/store/PPF/parameters/34_3/more_info.asp" target="_blank">Tejano salsa verde</a> (or substitute)</li>
<li>1 tablespoon, minced green chilies</li>
<li>2-3 tablespoons butter</li>
<li>1/2 cup sour cream</li>
<li>3/4 cup grated sharp Cheddar cheese</li>
<li>salt and pepper to taste</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Preheat oven to 375F</li>
<li>Scrub and pat dry the potatoes (Do Not Peel)</li>
<li>Using a paring knife, pierce deeply into each potato before baking</li>
<li>Set potatoes directly on oven rack and bake for 1 hour or until tender</li>
<li>Remove from oven and let set for 10 minutes</li>
<li>Cut about 1/3 off the tops of the potatoes</li>
<li>Use a spoon to scoop out the pulp</li>
<li>Reserve the shells</li>
<li>Mash the pulp and stir in the chilies, salsa, butter, sour cream, and cheese</li>
<li>Add salt and pepper for taste</li>
<li>Increase oven temp to 400F</li>
<li>Fill the shells generously with the potato mixture</li>
<li>Sprinkle cheese on top of each potato and place in oven for 10 minutes or until cheese is bubbling</li>
<li>Add a dollop of sour cream and serve immediately</li>

<li>1/2 small onion, chopped</li>
<li>3 strips of bacon, crisp and crumbled</li>
<li>1 tablespoon Wondra flour (all purpose flour will do)</li>
<li>1 teaspoon salt</li>
<li>1 teaspoon pepper</li>
<li>2/3 cup Tejano slasa (or substitute)</li>

<li>In a large cooking pot place all of the ingredients (reserve 1 cup of cubed potatoes and chopped chives).</li>

<li>1/2 pound cooked ground beef-seasoned with 1 teaspoon fajita seasoning (if fajita seasoning is not available use 1/4 teaspoon garlic powder, 1/4 teaspoon oregano, and a little salt &amp; chili pepper to taste.</li>
<li>1 cup Jalapeno Jack Cheese (for a milder version to serve the little ones, use cheddar or regular Jack cheese)</li>
<li>1/2 cup sour cream</li>
<li>1 cup chopped tomato</li>
<li>1/4 cup chopped Cilantro</li>
<li><a title="salsa" href="http://www.texmextogo.com/store/PPF/parameters/32_3/more_info.asp" target="_blank">Tejano Native Texan Salsa</a> (or substitute)</li>
</ul>
<h4>Directions</h4>
<ol>
<li>Bake or microwave potatoes until done, about 6-10 minutes on high in the microwave, until gently yield to touch when firmly pressed or bake at 425 degrees for 30 minutes.</li>
<li>Cut in half, allow to cool slightly.</li>
<li>Scoop some of the flesh out of the centers with a spoon or melon baller, leaving about 1/2 inch of flesh next to the skin.</li>
<li>Fill each half with cooked and seasoned Ground Beef and top with Jalapeno Jack Cheese.</li>
<li>Place under the broiler until cheese is melted, about 2-3 minutes.</li>
<li>Remove from the oven and top each half with sour cream.</li>
<li>Sprinkle chopped tomato and chopped cilantro on top of each and serve.</li>
<li>Add a bowl of salsa on the table, spoon salsa over warm potato nacho&#8230;the best!!</li>

<li>8 eggs, lightly beaten</li>
<li>Grated Cheese (Queso Blanco, Cheddar or Jack)</li>
<li>Warm Tortillas</li>

<h4>Directions</h4>
<ol>
<li>In a cast-iron on non-stick skillet, fry Chorizo sausage, breaking up lumps with a spoon, until fully cooked.</li>
<li>Drain fat, add potatoes and return to burner for 5-6 minutes or until brown.</li>
<li>Add tomatoes, onions and salsa and cook for 3-4 minutes.</li>
<li>Add eggs and stir until eggs are scrambled.</li>
<li>When set, transfer to a serving dish.</li>
<li>Serve with warm tortillas, grated cheese, and salsa on the side.</li>
