Mexican Roasted Sweet Potatoes are some of the best sweet potatoes you will ever eat. The roasted sweet potato recipe that you will be making comes to us from Rockin Robin’s Cooking Mexican Recipes. It is the site to go to for first class Mexican Food Recipes.

This roasted sweet potato recipe is a dish you can make not only with Mexican food but anytime.

Our recipe includes a variety of spices and flavorings and a little heat. Feel free to adjust this part according to your taste.

We will be roasting this recipe in olive oil which gives the potatoes a delicate caramelized flavor.?

When they are almost done we will brush them with our Honey-Lime Glaze and sprinkle with fresh cilantro.

When selecting your potatoes, look for those on the small to medium size with no bruises or cracks. The real large ones tend to be more fibrous and not as sweet.

Some of the more common sweet potatoes you will find in the grocery store are Garnet, Jewel and Beauregard to name a few of the seven major varieties.

Did you know that the sweet potato is part of the morning glory family and not related to the yam?

How To Make The Roasted Sweet Potato Recipe

Ingredients

3 pounds sweet potatoes, peeled, cut into 1 inch chunks

2 tablespoons plus 1 teaspoon olive oil

1 teaspoon chili powder, use cayenne if you like it hot

Salt to taste

chopped cilantro

Glaze

1/2 cup honey

1/4 cup fresh lime juice

1/4 teaspoon ground cinnamon

1/2 teaspoon chili powder

Directions

Preheat oven to 425F

In a bowl toss the sweet potatoes with the olive oil.

Using your fingers, sprinkle the chili powder over the potatoes. Stir and repeat the process. This will help spread the chili powder evenly over the potatoes.

Pour onto a baking sheet and spread them out. Use a rubber spatula to scrape out all the oil. The oil will help keep the potatoes from sticking. Salt to taste.

Bake for 20 minutes. Check the sweet potatoes after 10 minutes and turn them over.

If they start to stick, you can pour a drizzle of olive oil over them.

Directions For The Honey Lime Glaze

While you are roasting sweet potatoes, mix the glaze ingredients in a bowl with a whisk.

When the potatoes are done, brush on the glaze mixture and return to the oven for an additional 5 to 10 minutes.

Place in a serving dish and sprinkle the chopped cilantro over the roasted potatoes and serve.

Storing Sweet Potatoes

Store your sweet potatoes in a cool, dry place between 55 to 60 degrees F. They will keep for up to one month.

Don’t even think about storing them in the refrigerator. The inside will harden and their taste will be affected.

Rinse them only right before you plan to cook them. Once you cook them they will keep about 1 week in the refrigerator.

Here is a tip: This sweet potato recipe freezes well so make up a dish a head of time. When you are in a hurry or don’t have enough time to cook, you’ll just have to pop them out of the freezer and heat them up.

Other Flavors And Spices You Can Add

Sweet potatoes can be flavored with a number of other items such as pineapple, oranges, raisins, toasted walnuts, sunflower seeds or pecans.

Want to add some spicy hot to this recipe? Try substituting ancho chile powder or chipotle chiles.

Also good is cloves, nutmeg, ginger, maple syrup, rum, balsamic vinegar, or coconut.

So you see, sweet potatoes are very versatile and very good for you. Did I mention they are loaded with vitamin A, C and dietary fiber? A good potato recipe is really good for you!

So the next time you are whipping up some Mexican fare, try this Mexican sweet potato recipe with some carne asada and a margarita. Ole!! The best potato recipes will be found on this site…no doubt.

Potatoes are an excellent source of carbohydrates, the body's best energy source. There are two types of carbohydrates: simple carbohydrates found in refined sugar, candy bars and most refined products to provide a quick burst of energy quickly as well as deplete energy quickly and complex carbohydrates (as in potatoes) release their energy slowly, keep the blood sugar level steadier and longer, the body's best source of energy on a long term basis. Potatoes are high in fiber aiding the digestive system and they absorb water which makes one feel satisfied and less hungry. Potatoes are fat free, cholesterol free, sodium free and saturated fat free. They are high in Vitamin C and potassium and are a great source of Vitamin B6 and dietary fiber.

Potato Nutrition Facts

Potatoes are an excellent source of carbohydrates, the body’s best energy source. There are two types of carbohydrates: simple carbohydrates found in refined sugar, candy bars and most refined products to provide a quick burst of energy quickly as well as deplete energy quickly and complex carbohydrates (as in potatoes) release their energy slowly, keep the blood sugar level steadier and longer, the body’s best source of energy on a long term basis.

A single serving of a potato will provide a person with 40% of the daily value needed of vitamin C; this will help keep the body from bruising easily. Also, the potato will give you 20% of the potassium needed for your body each day; it is a needed element for everyone especially athletes- it helps stabilize the body when it is being over worked.

The USDA approved nutritional panel mentions that the potato will provide 6% of iron; this element allows blood and oxygen to attach together. The lack of iron in a diet will cause a person to be more tired than usual no matter how much sleep you get. 40% of the potato provides vitamin C; it helps us reduce the risk of our body from getting bruised.

Salsa Nutrition Facts

Due to an increasing awareness of nutritional issues, salsas have risen in popularity partly because they are very low in cholesterol, fat, sugar and calories and partly because they provide a great way to add depth and flavor to any dish or just that extra zip to a sauce. Salsa is the #1 selling condiment in North America; it has now become the favorite topping over eggs, as a sauce over chicken or beef, over pizza or pasta and poured over baked potatoes and French Fries. This fact is partly attributed to a growing awareness of a healthier way of eating i.e. legumes, grains, vegetables and organic produce of all kinds and also to an increasing awareness of nutritional issues.
