Potato Patch Recipes welcomes your comments and suggestions on this Mashed Potato Casserole Dish or any other potatoe recipies.

There are certain foods that kids love: Hot dogs, Mac and Cheese, Hamburgers, and Mashed Potatoes. Wait a second….Why mashed potatoes? It is not too difficult if you think about it from a kid’s perspective. First and foremost you can call them smash or smashed potatoes. What kid wouldn’t jump on that like white on rice? And of course they are easy to play with on the plate. Anybody with an imagination a fork and a good portion of mashed potatoes could make a sculpture. And the fact that you could pour gravy in the middle of a mashed potato volcano is just about irresistible…especially if it decides to blow.

I think the mashed potato is so kid friendly that it sticks with us througout our entire life. Sure we try and make it into adult food. We call it garlic mashed potatoes or a mashed potato casserole, so adult sounding. But the kid in us really knows that the best mashed potatoes are loaded with cheese. Of course anything loaded with cheese will get your kids attention.

A good mashed potato recipe is easy to incorporate into a mashed potato casserole. When you stop and think about it, to make mashed potatoes is 90% the same as making a large mashed potato casserole. The only difference is popping it in the oven.

The best mashed potatoes also make for the best leftovers. Have you ever noticed how all comfort foods make for great leftovers? I think is because we tend to make comfort foods from scratch. We use homemade recipes to make homemade food. All homemade food just seems to taste just as good if not better the next day. With the advent of the microwave oven, heating up the mashed potato casserole will make you into a quick gourmet chef.

Potatoes are typically served as a side dish in most restaurants. Probably because potatoes are inexpensive. Which of course makes potato recipes very attractive to the bottom line. Side dish recipes need to taste good as well as be cost effective. Easy side dish recipes like the mashed potato casserole serves both purpose. A easy casserole recipe will be quick to make and have the added advantage of being a “make ahead” recipe.

One thing you should keep in mind as your cooking mashed potato recipes is that they can all easily be vegetarian casseroles. Yes, vegetarian casserole recipes are easy to make with potatoes. When you cook the casserole just remember not to add any meat products and viola!! You have yourself vegetarian recipe.

I tried to become a vegetarian once. It didn’t work out. I like bacon with my potatoes….and just about everything else. But vegetarians and vegans are good people. Just don’t offer to buy them a Value Meal at McDonald’s or Burger King. I guess they can have the salad. But no french fries.

What do you think of instant potatoes? I don’t like them. The large potato growers and processors have made big strides with instant potatoes, but they still don’t taste as good as homemade. I had a friend who tried to convince me that the Potatoes Au Gratin that comes out of a box is as good as a homemade potatoes au gratin recipe. But I’m not buying it. Besides you can’t buy sweet potato au gratin in a box…can you???

I do make a very good tasting pepper casserole with mashed potatoes. There is no end to the combinations you can make in the oven.

If you are on a low carb diet, like the South Beach Diet or the Atkins diet you can substitute cauliflower for potatoes. I’m not going to get into that right now, but just be aware that people do that. That’s right…they make cauliflower mashed potatoes.

I never seriously though about becoming a chef or a full time cook. Even though I enjoy cooking I don’t have any desire to spend all of my time in the kitchen. Cooking school was not one of my dreams. Although I do watch the pros on The Food Network. They are always using kitchen gadgets in ways I never thought of. But in all honesty, Rachel Ray and Paula Deen can be the stars. I just want to be able to whip up quick dinner recipes.

Remember: When Cooking a Mashed Potato Casserole Recipe have fun. Enjoy yourself! The potato recipe is nutritious because the potato is filled with nutrition — vitamins and minerals.

“There seems to be no dogma concerning the origins of potato salad, but Germany is a good place to begin. As a country with lots of potatoes and lots of recipes for potatoes, Germany almost certainly was among the first to look at cooked small new potatoes or cut chunks of larger spuds and imagine them blanketed with dressing. The dressing they came up with was a classic. Kin to the heated dressing used to wilt spinach salad, this one thrilled German taste buds, raised as they were on sauerkraut and sauerbraten with vinegar bite. Some versions featured a little coarse mustard, others cut the sour with a little sugar, and most added bacon and even its flavorful drippings. By the time the notion of potato salad reached France, vinegar wasn’t quite good enough. The French demanded full-scale vinaigrette, and it was no sweat to satisfy their demands. Whenever you see something called “French potato salad,” it’s a safe bet you’re in for potatoes (and probably other vegetables, too) in a light vinaigrette, with Dijon mustard and sweet tarragon.

When potato salad caught on in the United States, in the second half of the 19th century, it was probably by way of German immigrants. To this day, most people who know how to cook, or at least know how to eat, understand that “German potato salad” will be served warm, will feature no mayonnaise, and will be pleasantly tart with vinegar. The American idea of making potato salad with mayonnaise has no recorded history – but then again, neither does the idea of mayonnaise itself. Clearly a sauce created in France using egg yolks, oil and either lemon juice or vinegar, little is clear after that. Virtually every French bible of cuisine explains the name differently, ranging from a link to “Magon,” the Carthaginian general who helped his brother Hannibal battle the Romans,” to a possible misspelling of “Bayonnaise,” hailing from the town of Bayonne in France – and later, less romantically, New Jersey.

Its sweet, creamy mouthfeel served up just the right delight when wrapped around solid, dependable American potatoes.”
—”A world of potato salads; Labor Day tradition gets global makeover,” John DeMers, The Houston Chronicle, August 29, 2001 (Food: p. 1)

“Despite its popularity in this country, potato salad is not an all-American creation. Potato salad is said to be of Teutonic origin, prepared when boiled potatoes were tossed with oil, vinegar and seasonings, a dish known now as German potato salad. The French, Norwegians, Swedes, Russians and Italians all have their own versions. Germans make a marvelous warm potato salad to which they add tiny bits of fresh tomato and red and green bell peppers, then toss the whole concoction with a warm bacon and onion dressing. The Greeks also prefer warm potato salad, with garlic, olive oil and lemon. Italian potato salad is apt to have ample amounts of fresh parsley, often chunks of salami and is dressed with an olive oil and vinegar dressing. American potato salad is heavier and heartier than European versions. Some people like lots of additions such as onion, sweet pickles, celery, hard-cooked eggs, pimento, chives, olives and parsley.”

I am a sucker for a good Creamy Potato Salad Recipe. I will pass up every side dish that is placed out on the dinner table in order to get to the creamy potato salad.

I think my obsession started with my mother’s delicious Creamy Potato Salad Recipe. I just loved it. I would fill myself up with the creamy potato salad and leave all the other food. Of course this didn’t make my mother too happy, but secretly I think she was proud of herself for knowing how to make potato salad that was simply scrumptious.

This recipe is not my mom’s original creamy potato salad recipe. It is close to it but not exactly the same. This new potato salad recipe contains mayonnaise and bacon like my mom’s creamy potato salad, but it uses red potatoes where my mother used Russets.

Despite this creamy potato salad recipe not being an exact duplicate of my mother’s recipe, it is still a quick, easy, and one of the best creamy potato salad recipes I have ever tasted.

After the potatoes are cooked, set them aside and let them cool.

As the potatoes are cooling, cook the chopped onion and bacon together. When the bacon is crispy, drain the drippings and reserve them.

Now combine the milk, bacon drippings, sour cream, and mayonnaise in a bowl and mix together.

In a large bowl mix together the eggs, the onion-bacon mixture, and the cooked potatoes.

This creamy potato salad recipe makes a fantastic salad cup and is just about the best “make ahead” recipe you will ever make.

The two most frequent questions we get when posting a new recipe: Is this recipe a low fat salad recipe, and, Is there a way to cook this creamy potato salad recipe and make it a vegan or vegetarian recipe.

In order to make this creamy potato salad recipe a low fat salad recipe and also a vegan or vegetarian friendly recipe you would need to use the following substitutions: Turkey Bacon or Veggie Bacon, Low Fat Yogurt instead of Mayonnaise, Low Fat Sour Cream or Tofu based Sour Cream, Low Fat Milk or Soy Milk.

So you see you can cook a low fat salad recipe that is also a vegetarian or vegan friendly recipe.

This creamy potato salad is a great summertime recipe. It is a simple potato salad to make and it will go well as a picnic recipe or as a dish for leftovers. You know leftovers are what make this creamy potato salad recipe such a good “make ahead” side dish recipe.
